Job description

The Baker is responsible for the consistent preparation and display a wide variety of scratch pastries, cakes, etc. & all bread items for our busy diner. Reports to the Bakery Mgr.

Qualifications:
 No degree/certificate required – Pastry or related Culinary Degree/Cert preferred; ServSafe or similar food handlers card also desired

 Minimum 1yr experience baking in commercial pastry bakery environment (high-end restaurant/bakery, grocery store, small private or in-home shop, industrial warehouse operation); cake decorating and/or sourdough experience a plus.

 Minimum 18 years of age

Essential Duties & Responsibilities:

§ Correctly prepare all variety of scratch bakery items (especially scratch yeast breads, buns, cinnamon rolls, pastries, pies, muffins, cookies, cakes, candies, etc.) from recipe components to finished products in accordance with expected quality and appearance in quantities and within timelines specified on the daily/weekly to do list

§ Safely and correctly utilize a variety of tools, equipment and appliances including but not limited to: knives, utensils, measures, scales, thermometers, hand blenders/mixers, stand mixer, food processors, graters, slicers, sheeter, refrigerators, freezers, proofer, ovens, ranges, racks, bins, bakery cases, etc.

§ Ensure all variety of bakery and related food items are prepared strictly according to established recipes, menus and instructions

§ Comply with portion sizes, preparation & storage methods, date & product identification, FIFO food rotation, safe temperature and food allergen rules

§ Ensure all variety of bakery items are prepared, shaped, proofed, baked, cooled, plated, decorated, garnished, packaged, identified and displayed correctly and with consistently high quality and attention to detail

§ Greet bakery customers, answer questions, explain bakery item(s) composition, take in-person & phone orders, fulfill and package bakery items to go

§ Utilize the POS with cash drawer to cash-out bakery customers, including accurate money counting or processing credit/debit/gift card transactions

§ Keep walk-ins, food storage, bakery and prep work areas, equipment and tools clean and organized, performing weekly or more frequent extra cleaning activities as the bakery and related activities are on display to all guest inside and outside the diner

§ Assist in control and stocking/reordering of bakery equipment, inventory and supplies, including occasional use of stepladder to reach overhead shelving

§ Complete deep cleaning activities (such as scrubbing floors and trash cans) and assigned periodic equipment maintenance when requested

§ Daily dispose of trash and maintain floors in clean condition dry using brooms, mops, “wet floor” signs, etc.

§ Perform all work in a safe and sanitary manner, according to food handling, sanitation and employee safety standards

§ Assist HOST/HOSTESS, COOKS and SERVERS as needed

§ Other duties as assigned

 Appearance & Grooming: maintains uniform and body in clean condition; refrains from offensive odors such as excessive perfumes, colognes and body-odor
 Demeanor & Behavior: performs all job duties in a professional teamwork customer-oriented manner; refrains from any using any profane, obscene, harassing, threatening or otherwise inappropriate language, actions or behaviors; alerts management of any personal or witnessed problems immediately
 Attentiveness: focuses on effective completion of job duties and meeting the needs of customers and staff; refrains from distractions such as cellphones, social media, and idle chit-chat during work time
 Personal Protective Equipment (PPE): utilizes all required PPE (e.g. non-slip shoes, gloves, face masks, aprons); inspects and maintains PPE in safe and sanitary condition
 Chemical Safety: only uses chemicals for which training has been provided; reads warning labels and Safety Data Sheets as needed
Work Conditions:
 Working hours may include early mornings through evenings Monday through Sunday, including holidays
 Majority of work involves communicating and interacting with both staff and customers while completing job duties, including occasional dealings with difficult or upset customers
 Majority of work completed while standing and walking on dry, damp, and potentially slippery or wet floors
 Work includes activities such as grasping, holding, pushing, pulling, bending, lifting at/above/below waist, scrubbing, scraping, stacking, sweeping, mopping, operating equipment, handling sharp items, handling hot items, handling greasy and dirty items
 Most work is completed inside the building, but may still involve exposure to moderately hot, cold and/or humid air conditions both inside and outside
