The Bread Baker at Bastion Bakery is responsible for delivering a refined, efficient, and hospitality-driven artisanal bread program within a luxury corporate environment. This role combines technical fermentation knowledge, precision in execution, and elevated craftsmanship. The Bread Baker represents the Bastion brand through consistency, attention to detail, and professional presence while maintaining a seamless production flow to supply daily operations.

Your Responsibilities:

  • Scale, mix, shape, proof, and bake a variety of artisanal breads, sourdoughs, and baked goods with consistency, precision, and efficiency.
  • Execute recipes exactly as written, ensuring proper dough temperatures, fermentation times, hydration levels, and bake standards.
  • Maintain full knowledge of the bakery production schedule and ingredient profiles to ensure product availability and consistent quality.
  • Deliver warm, professional, and collaborative service when interacting with colleagues, guest culinary staff, and event teams.
  • Manage daily bake schedules and deck/rack oven capacity while maintaining composure during high-volume production periods.
  • Monitor and maintain bakery equipment calibration, mixers, proofers, deck ovens, and perform daily equipment cleaning protocols.
  • Follow all opening and closing procedures, including production logging, inventory checks, and station reset.
  • Maintain cleanliness and organization of the dough prep area, flour storage, walk-in coolers, and back-of-house production space.
  • Monitor pars for flours, grains, yeast, starter cultures, and packaging materials; communicate reorders proactively.
  • Adhere to all health code and food safety standards, including proper allergen handling, dough labeling, and sanitation procedures.
  • Uphold grooming, uniform, and presentation standards in alignment with Bastion brand guidelines.
  • Support building catering and private tenant events through preparation, production, and packaging of specialty bread items while maintaining Bastion culinary quality standards.
  • Assist with light kitchen prep, oven management, and general workspace maintenance as needed to support overall culinary operations.
