Director of Food & Beverage - New Luxury Opening

Are you a strategic, hands-on food & beverage leader ready to shape the full dining experience for a new luxury hotel opening? We are seeking an experienced and innovative Director of Food & Beverage to lead all culinary and beverage operations for an upscale, approachable luxury property in the Greater Los Angeles area.

This role requires a well-rounded leader with experience across independent restaurants and luxury/upscale or boutique hotels. The ideal candidate brings a global perspective, strong business acumen, and the ability to collaborate closely with ownership and a restaurant group during an intensive pre-opening phase. Responsibilities
  • Provide strategic and operational leadership for all food and beverage outlets, including restaurants, bars, lounges, in-room dining, banquets, and special events.

  • Partner with the Restaurant Group and ownership to define and execute the property's overall food & beverage vision and positioning.

  • Lead recruitment, training, education, and ongoing development of culinary, beverage, and service teams, with a strong focus on associate engagement, morale, and retention.

  • Establish a leadership culture rooted in education, mentorship, accountability, and respect, recognizing that great guest experiences begin with supported and motivated associates.

  • Oversee menu development, beverage programming, pricing strategy, and consistent quality execution across all outlets.

  • Maintain the highest standards of food quality, service, presentation, sanitation, and safety.

  • Manage budgets, forecasting, inventory, food and beverage costs, and labor to achieve financial and operational goals.

  • Drive innovation through seasonal programming, local sourcing, global influences, tasting menus, and elevated VIP experiences.

  • Ensure seamless coordination between culinary, service, and operations teams during pre-opening and ongoing operations.

Qualifications
  • 5+ years of progressive food & beverage leadership experience, including senior-level roles in luxury or upscale hotel environments.
  • Proven success overseeing multiple outlets and leading both culinary and front-of-house teams.
  • Strong knowledge of global cuisines and the ability to translate them into a refined, New American-forward dining experience.
  • Demonstrated business acumen with a strong understanding of cost control, budgeting, forecasting, and labor management.
  • Experience with hotel pre-openings or major renovations strongly preferred.
