The Meritage Resort & Spa is a premier Napa Valley destination known for memorable culinary experiences, exceptional hospitality, and beautifully executed events. Our banquet culinary team prepares and serves a wide range of functions, including weddings, corporate meetings, conferences, social celebrations, wine dinners, and large-scale resort activations.
We are looking for our next Banquet Cook II to join our high-volume culinary team. This role is ideal for a cook who has mastered the fundamentals and is ready to take on greater responsibility while continuing to develop technical skills in banquet production and event execution.
As a Banquet Cook II, you will work alongside experienced chefs and culinary team members to prepare high-quality food for a variety of events. You will be responsible for executing menu items according to recipes and presentation standards while maintaining consistency, organization, and efficiency in a fast-paced environment.

What You'll Do
  • Prepare and execute banquet menu items for plated dinners, buffets, receptions, breaks, family-style meals, and special events.
  • Produce high-quality proteins, seafood, vegetables, starches, sauces, soups, salads, desserts, and other banquet preparations according to standardized recipes.
  • Assist with large-volume food production while maintaining quality, consistency, proper seasoning, and presentation standards.
  • Prepare daily mise en place and ensure all assigned work areas are fully organized and stocked.
  • Follow banquet event orders, production sheets, prep lists, and chef direction to ensure accurate execution.
  • Assist with the preparation, setup, replenishment, and breakdown of banquet buffets and food stations.
  • Support timely execution of plated meals and other banquet services while meeting event timelines.
  • Monitor cooking temperatures, product quality, portion sizes, holding temperatures, and overall food presentation.
  • Work effectively across hot food, cold food, pastry, garde manger, and other banquet production areas as business demands require.
  • Assist with receiving, storing, labeling, rotating, and organizing products using FIFO and food safety best practices.
  • Minimize waste through proper portioning, careful preparation, and thoughtful product utilization.
  • Maintain clean, organized, and sanitary workstations throughout production and service.
  • Communicate effectively with banquet chefs, sous chefs, cooks, servers, and other team members to support seamless event execution.
  • Cross-train in additional areas of the banquet kitchen and provide support to other culinary outlets as needed.
  • Maintain all local, state, company, and health department food safety and sanitation standards.
  • Perform additional culinary responsibilities as assigned to support the overall success of the banquet operation.

Qualifications
  • Two or more years of experience in a professional kitchen preferred.
  • Previous banquet, catering, hotel, or high-volume culinary experience strongly preferred.
  • Experience preparing food for plated dinners, buffets, receptions, or large events is beneficial.
  • Knowledge of professional cooking techniques, proper seasoning, cooking temperatures, and food safety practices.
  • Strong knife skills and the ability to prepare ingredients efficiently and consistently.
  • Ability to follow recipes, production sheets, banquet event orders, and chef direction.
  • Ability to multitask while maintaining composure, organization, and quality during high-volume production and service periods.
  • Strong communication skills and a collaborative approach to teamwork.
  • Reliable attendance, professionalism, and a positive, coachable attitude.
  • Culinary school or formal culinary training is beneficial but not required.
  • California Food Handler Card, or the ability to obtain one within 30 days of hire.
  • Must be available to work varying shifts, weekends, holidays, early mornings, evenings, and extended hours based on event business levels.

Physical Requirements
This position requires standing and walking for extended periods, lifting up to 50 pounds, frequent bending, reaching, pushing, pulling, and repetitive movements while working in a commercial banquet kitchen and event environment.
Team members regularly work around hot cooking equipment, ovens, steam, refrigerated storage areas, sharp tools, heavy pots and pans, carts, and cleaning chemicals while maintaining strict safety standards and wearing required personal protective equipment.
