Position Summary

Responsible for preparing, packaging and labeling of meals, entrees, salads, party trays, rotisserie chicken, and ribs. Follows Costco standards for food preparation and sanitation. Cleans and sanitizes the Service Deli, deli equipment and deli utensils. Maintains a clean work area. Restocks supplies as needed. Provides a high level of member service.

Job Duties

  • Packages, wraps, seals, weighs, and labels products manually and with a manual wrapping machine. Utilizes carts and rolling racks to perform daily duties. Stocks and rotates display case. Restocks and assembles large boxes of ingredients and supplies in the prep area. Slices vegetables for salads, entrees, and garnish on prepared foods. Assembles party trays, meals, and salads. 
  • Skewers and cooks chickens, ribs and all protein in commercial rotisserie ovens or combi ovens. Inserts up to eight skewers with chickens or ribs into rotisserie rotator slots, presses button to rotate for loading. Packages products, weighs ribs, places in heated display cases. Harvests chicken meat and pieces and carries a tray to the blast chiller to be used in deli products. Rotates stock in the cooler and uses carts to pull chicken and rib boxes for use in deli production.  
  • Follows Costco formulas and diagrams and monitors finished products to see that department consistency and quality standards are met. Complies with health codes regarding sanitation, temperatures, and pull dates. Upholds safety and security procedures.
  • Counts on hand product, figures production needs, and documents production on daily form. Fills out time and temperature record forms. Records product to be salvaged, damaged, or destroyed for Manager audit. 
  • Shops the warehouse and purchases needed supplies and ingredients for the day’s production. 
  • Cleans and sanitizes deli work areas including deli prep room, rotisserie chicken room, chicken prep area. Cleans freezer and cooler area weekly. Sweeps, sprays, mops, washes, wipes, applies cleaning agents, and operates a low-pressure washer. Logs sanitation procedures performed on daily reports and complies with health code. Follows safety procedures and reads labels for proper use and precautions related to cleaning products.
  • Performs preventive maintenance for machinery, equipment, and implements. Cleans equipment by disassembling and spraying with a cleaning and sanitizing agent and wiping base. Cleans deli display cases weekly or as needed. Washes, rinses and sanitizes removable parts in a commercial dishwasher or by hand in 3 a compartment sink. Wipes stationary parts with a cleaning agent, water and sanitizing agent. Cleans deli prep room filters weekly.
  • Using proper personal protective equipment (PPE): Cleans ovens by scraping interior, applying cleaning agent, wiping inside oven and base; Starts oven on clean cycle; Cleans oven hood by spraying and wiping with degreasing compound; Empties and cleans grease traps on ovens; Empties and cleans grease caddy; Cleans skewers using power soak skewer tank.
  • Ensures proper cleanup and disposal of hazardous materials.
  • Ability to operate vehicles, equipment or machinery.
  • Assists with department duties as necessary.
  • Assists in other departments of the warehouse as necessary.
