Job description

POSITION SUMMARY:

Under the general direction of the Restaurant Manager, the Food and Beverage Supervisor supervises all designated service areas; including, Sacy's, Back Bay Grill & Games, Conference/Catering Facilities, Casino Bar and other service operations as developed by Bay Mills Resort & Casinos.

ESSENTIAL FUNCTIONS:

1. Provides exemplary customer service by "Exceeding Expectations One Opportunity at a Time".

2. Ensures that patrons in all casino F&B outlets and service areas are provided with exceptional service and guest experience.

3. During each shift the supervisor must be present in their designated food and beverage outlet to inspect, supervise and coach. Must continuously train staff in guest service standards and new weekly topics.

4. Ensures that all standards regarding table settings, floors, bar setup, housekeeping and physical plant are set up and presented per established standards.

5. Monitors and maintains food and beverage sequence of service to include monitoring of guest alcohol consumption, providing intervention when necessary according to company policy while following all government alcoholic beverage requirements to protect the casino liquor license.

6. Interacts with customers to determine level of satisfaction, areas of underperformance.

7. Identifies and addresses service staff who require assistance in compliance to guest service standards and additional training.

8. Implements new service practices that will increase customer satisfaction.

9. Assists department testing of potential client food, beverage or service ideas to increase satisfaction with their selections.

10. Takes advantage of opportunities to enhance the value of product or service.

11. Maintains cleanliness and sanitation levels of dining rooms, beverage service areas and service stations to Inter-Tribal Council required ratings at all times.

12. Assists in identifying problem items requiring repair and maintenance of all equipment and operational elements of outlets

13. Assists with contests and rewards for the top sales achievers.

14. Ensures that schedules are clearly communicated to all outlet employees. Verifies compliance by staff of following written schedules.

15. Maintains a working labor control system and assist in troubleshooting.

16. Ensures that employees report and/or depart at scheduled times while observing proper uniform, hygiene and coordinated breaks as agreed upon or scheduled.

17. Maintains proper inventories of related food & beverage products supporting dining room areas and beverage service areas.

18. Ensures the quality levels of food & beverage products and maintains quality standards in production, services, facilities and guest satisfaction including safe serving and holding temperatures.

19. Works with Security and Surveillance teams to maintain processes and integrity of policy and service in a highly regulated environment.

20. Exhibits a positive and involved team attitude to all and promotes positive relations through an environment that encourages open communications, trust and mutual respect.

21. Supervises food service and production employees in a professional and humanistic manner to develop teamwork and achieve projected goals.

22. Makes sure that employees in each area are communicated with and are providing all agreed upon service standards to all patrons, sanitation standards, productivity standards and ensure exceptional guest satisfaction.

23. Trains and coaches staff while reviewing progress. Provides feedback and guidance while holding people accountable.

24. Conducts staff assessments, scoring and periodic reviews.

25. Interviews and evaluates employment applicants screened by the Human Resources Recruiter and hires the best available qualified applicants for the needs of the business.

26. Conducts training and development of the food & beverage team.

27. Makes sure that employee absences and no shows are covered and violations documented in accordance to the attendance policy.

28. Consistently applies the Bay Mills Personnel Policies and Procedures fairly to all departmental employees.

29. Ensures that all required paperwork is completed and submitted to Human Resources/Accounting in a timely manner; including, but not limited to: end of day reports, leave requests, late/absent reports, performance evaluations, staff attendance records, employee status change, corrective actions, labor requests, accident/injury reports, etc.

30. Responsible for learning and following daily policies and procedures for the F&B Department and Bay Mills Resort & Casinos.

31. Attends all mandatory trainings designated by the Human Resources Department and/or immediate Supervisor, including TIPS and Title 31 training. Keeps department staff compliant in these areas.

32. Performs and ensures compliance with the Bay Mills Gaming Commission Rules and Regulations.

33. Other duties may be assigned within the scope and complexity of this position's essential functions.

PHYSICAL REQUIREMENTS:

While performing the duties of this job, the employee is regularly required to stand for extended periods of time. The employee must bend, squat, climb, crouch, kneel, and push/pull. The employee must occasionally lift and/or move up to 100 pounds while frequently lifting and/or moving up to 75 pounds. The employee is regularly exposed to dust and cold when working in the freezer and coolers. The employee is regularly exposed to marked changes in temperature and humidity and moving machinery, moderate noise, heat, cold, smoke and hot surfaces involved in cooking food, grease and dirty surfaces, use of caustic chemicals. The employee may experience cuts, burns, sprains and strains.

POSITION REQUIREMENTS:

1. High School diploma or equivalent required. Associated Degree in a relevant field desired.

2. Must have one to three years' supervisory experience in maintaining a high level of service quality, high volume operations and cleanliness in an upscale hospitality operation.

3. Experience in serving large numbers of persons and providing a superior experience.

4. Must be able to obtain a gaming license through the Bay Mills Gaming Commission and maintain eligibility throughout employment.

5. Must have a positive, outgoing personality.

6. Must possess strong administrative, organizational, and communication skills as demonstrated through past work experience.

7. Must have excellent working knowledge of computers and Point of Sales (POS) systems.

8. Leads by example, works alongside fellow employees to insure proper presentation and to enforce teamwork.

9. To perform this position successfully, an individual must be able to satisfactorily perform each function listed under the essential functions and physical demands categories of this position description.

10. Must have an excellent past work record, including attendance.
