Job description

THE LEAD RESEARCH AND DEVELOPMENT TECHNICIAN LEADS AND COORDINATES THE DEVELOPMENT AND IMPROVEMENT OF KILLER BROWNIE
BAKERY PRODUCTS. THIS ROLE INCLUDES DESIGNING RESEARCH TRIALS, TESTS, AND FORMULATIONS FOR NEW
PRODUCTS, IMPROVING EXISTING PRODUCTS, AND ENSURING ALL PRODUCTS MEET THE HIGHEST QUALITY STANDARDS.
ROLE AND RESPONSIBILITIES
PRODUCT DEVELOPMENT AND TESTING
· Formulate and develop new product recipes, and improve existing products as needed.
· Lead initail recipe testing and formulation to align with customer requirements and Killer
Brownie standards.
· Design shelf-life studies as needed to confirm organoleptic and microbial requirements.
· Conduct rack tests and document results.
· Assist with new packaging testing.
PROCESS VALIDATION AND QUALITY
· Validate production recipes to confirm accurate quantities and ingredients.
· Confirm and document all R amp;D finished product quality check requirements prior to 1st
production runs.
· Calculate final product weights using rack test data collected from the weight checker.
· Conduct HACCP analysis for all new products prior to rack testing.
· Collaborate with the Technical Product Manager and Food Safety Manager to ensure
products meet regulatory and food safety standards.
DOCUMENTATION AND REPORTING
· Maintain proficiency in ingredient statement and nutrition facts panel software.
· Collect required ingredient documentation for R amp;D and load new production ingredient
documents into NetSuite.
· Analyze test results and prepare and share summary reports.
· Manage the product development process and key deliverables at each stage.
· Must become proficient in SKU management and Label update process and software.
INGREDIENTS, COMPLIANCE, AND INVENTORY
· Source new ingredients and related documentation, including COAs, Kosher certificates,
GMO status, BE status, and RSPO documentation, in coordination with the Technical Product
Manager.
· Submit ingredients for Kosher approval.
· Serve as backup support for case label creation. TEAM SUPPORT AND CONTINUOUS IMPROVEMENT · Maintain an up-to-date project list aligned with current priorities and requirements. · Provide product training for Production. · Follow all food safety, GMP and personal safety guidelines. · Provide additional support to the R amp;D department as needed.
