Position Summary

The Head Line Cook is responsible for leading and supervising the kitchen line during assigned shifts and ensuring that all food is prepared according to established recipes, procedures, portion sizes, and quality standards.

The Head Line Cook is expected to lead by example, work actively on the line, maintain consistency and speed of service, and make sure all cooks follow established kitchen procedures.

Responsibilities
  • Supervise and coordinate the work of line cooks during assigned shifts.
  • Actively work on the line and assist with food preparation and cooking as needed.
  • Ensure all cooks are working efficiently and completing their assigned responsibilities.
  • Prepare all menu items according to established recipes, techniques, portion sizes, and presentation standards.
  • Ensure that cooks follow recipes exactly and consistently.
  • Monitor food quality and consistency throughout the shift.
  • Ensure proper portion control and minimize unnecessary food waste.
  • Communicate with cooks and other team members to prevent delays and mistakes.
  • Identify and immediately address food quality or execution problems.
  • Ensure proper opening, shift-change, and closing procedures are completed.
  • Monitor inventory levels on the line and communicate shortages or production needs to management.
  • Ensure all food is properly labeled, dated, stored, and rotated according to FIFO procedures.
  • Maintain a clean, organized, and sanitary kitchen throughout the shift.

Qualifications
  • Previous line cook experience required.
  • Lead cook, shift lead, or supervisory kitchen experience preferred.
