About the Role
The Assistant Tortiller�a Manager supports the Tortiller�a Manager in planning, directing, and managing the operations and performance of the tortiller�a department. This role helps lead team members, ensures high standards of product quality and food safety, and provides exceptional customer service while promoting teamwork, efficiency, and compliance with company standards.
What You'll Do
  • Customer Service: Greet and assist customers with tortilla and specialty product orders.
  • Leadership: Supervise, train, and mentor team members while delegating tasks and ensuring breaks and meal periods are taken. Step in for the Tortiller�a Manager when needed.
  • Product Quality: Oversee the preparation, frying, and cooking of tortilla products, ensuring consistency in quality, weight, and presentation.
  • Merchandising: Keep displays fresh and attractive, rotate and replenish stock, and ensure signage and pricing accuracy.
  • Operations: Assist with ordering, inventory audits, and invoice reviews. Prepare masa, tortillas, and related products according to company recipes.
  • Compliance & Safety: Follow food safety regulations, sanitation procedures, and Vallarta's Tortiller�a Safety Program. Correct unsafe acts and report equipment issues immediately.
  • Sanitation: Maintain a clean, organized work area by sweeping, mopping, and washing equipment and utensils.
  • Other Duties: Support department needs and complete additional assignments as required by management.

Physical Requirements
  • Stand and walk for long periods (6�8 hours/day).
  • Frequently bend, squat, twist, and reach above/below shoulders.
  • Frequent use of hands for grasping, pushing, pulling, and fine manipulation.
  • Lift and carry up to 25 lbs. frequently and up to 50 lbs. occasionally (dry corn, maseca).
  • Heaviest item carried: 50 lbs., longest distance: 10 feet.
  • Work near cooking equipment, fryers, and tortilla machinery.
  • Exposure to dust, gas, fumes, heat, and humidity.
  • May be required to perform tasks at elevated levels (placing or retrieving items).
  • May operate forklifts, carts, or other moving equipment.

What We're Looking For
  • 1+ year of tortiller�a or food production experience, or 6+ months of management experience.
  • Knowledge of tortilla production from dry corn to finished products.
  • Ability to supervise, train, and mentor employees in a fast-paced environment.
  • Knowledge of tortiller�a equipment and food safety standards.
  • Basic computer skills (Excel, Word).
  • Strong math skills for measurements, inventory, and pricing accuracy.
  • Must be able to speak, read, write, and understand English.
  • Must be able to transfer to other store locations within a reasonable commute.
  • Must be legally authorized to work in the U.S.
