Cold Station Line Cook

Position Summary
The Cold Station Line Cook is responsible for preparing and plating all cold menu items — appetizers, salads, antipasti, and cold desserts — to Valentino's upscale standards of presentation and consistency. This role requires precision, speed, and a strong eye for detail during high-volume dinner service.
Key Responsibilities
- Prepare and portion cold appetizers, salads, charcuterie, and antipasti according to standardized recipes
- Plate dishes with consistent presentation matching Valentino's fine dining standards
- Maintain mise en place and ensure the cold station is fully stocked and organized before and during service
- Monitor food quality, freshness, and proper rotation (FIFO) of all cold station ingredients
- Follow all food safety and sanitation guidelines, including proper temperature control for cold-held items
- Communicate clearly with the kitchen team and expo during service to ensure timely ticket flow
- Assist with inventory counts and communicate low-stock items to the Kitchen Manager
- Keep station, equipment, and walk-in coolers clean and organized in compliance with health code standards
- Support other stations as needed during peak service or staff shortages
Qualifications
- Prior experience as a line cook, preferably in a fine dining or upscale restaurant setting
- Working knowledge of Italian cuisine and cold preparation techniques a plus
- Ability to work efficiently under pressure during high-volume service
- Strong attention to detail and consistency in plating
- Current Food Handler certification (or ability to obtain within [X] days of hire)
- Ability to stand for extended periods and lift up to 50 lbs
- Flexibility to work evenings, weekends, and holidays
