Position Summary

The Assistant Captain is a front-of-house service professional who supports the Captain in delivering consistent, polished service throughout the dining experience. This role assists with food and beverage service execution, including taking cocktail and dessert orders, operating the POS system, and ensuring timely and accurate delivery of items to guests.

The ideal candidate has prior serving experience and is comfortable working in a structured service environment. While extensive fine dining experience is not required, the Assistant Captain must demonstrate professionalism, attention to detail, and the ability to follow refined service standards. This role serves as a developmental position for team members preparing to advance into a Captain role.

Essential Functions

Service Support, Guest Engagement & Order Execution

  • Support the Captain in delivering a smooth, polished dining experience through attentive service and clear communication.
  • Greet guests courteously and professionally, reinforcing a welcoming and attentive atmosphere.
  • Assist in explaining menu items, specials, and promotions when engaging with guests.
  • Assist in taking and entering cocktails, dessert, and other beverage orders accurately into the POS system.
  • Repeat orders to guests to ensure clarity and accuracy.
  • Retrieve food and beverage items from the kitchen or bar, verify accuracy and presentation, and deliver promptly with appropriate accompaniments.
  • Monitor tables for basic guest needs, such as beverage refills, pacing awareness, and table readiness, escalating concerns to the Captain as appropriate.
  • Respond to guest requests in a timely and professional manner, supporting the Captain in maintaining guest satisfaction.
  • Present and process guest checks in accordance with restaurant and hotel procedures when assigned.

Service Standards & Compliance

  • Follow established steps of service and support the Captain in maintaining consistent service flow.
  • Reinforce service standards through professional conduct and attention to detail.
  • Adhere to all state, federal, and company alcohol service regulations, including ID verification and responsible service practices.
  • Maintain composure, professionalism, and a guest-focused demeanor during all service periods.

Station Readiness & Team Support

  • Check assigned station before, during, and after shifts for proper setup, cleanliness, and readiness.
  • Assist with clearing and resetting tables to support timely service and dining room flow.
  • Perform assigned opening, running, and closing side work, including restocking condiments and maintaining side stands.
  • Perform general cleaning tasks to meet health and safety standards.
  • Attend required meetings and training.
  • Perform other duties as assigned to support overall restaurant operations.

Internal Relationships

  • Reports to the Restaurant General Manager.
  • Works closely with Captains, Server Assistants, Bartenders, Culinary, and Restaurant Management.

External Relationships

  • Has regular, direct interaction with Members and Guests.

Qualifications

  • Prior serving experience required; refined or luxury restaurant experience preferred.
  • Working knowledge of food and beverage service standards and dining room etiquette.
  • Ability to operate POS systems and process guest checks accurately.
  • Ability to take cocktail and dessert orders confidently and professionally.
  • Strong communication skills and attention to detail.
  • Ability to work efficiently in a fast-paced dining environment.

Education & Experience Requirements

  • Prior restaurant service experience as a server required.
  • High school diploma or equivalent preferred.
  • Must obtain and maintain any required licenses or certifications as applicable.
  • CPR and/or First Aid certification preferred.

Physical Requirements

  • Lifting 50 lbs. maximum with frequent lifting and carrying of objects weighing up to 25 lbs. It requires walking or standing to a significant degree, as well as reaching, handling, feeling, talking, hearing, and seeing.
