Position SummaryThe Kitchen Manager owns the back-of-house operation at PINZ Milford. You're responsible for food quality, kitchen team performance, food cost, safety and sanitation, and the smooth execution of service across regular dining, lane service, bar food, and large catered events. You lead by example on the line, build strong cooks, and partner closely with front-of-house leadership to deliver a consistent guest experience every shift.
Key ResponsibilitiesOperations & Service- Run daily kitchen operations during high-volume nights, weekends, and event days, including expediting the line when needed.
- Ensure every plate that leaves the kitchen meets PINZ standards for quality, presentation, temperature, and timing.
- Coordinate with FOH managers, bartenders, and event staff to execute lane service, bar service, and private events seamlessly.
- Manage prep schedules to support peak periods (Friday/Saturday nights, league nights, and booked events).
Team Leadership- Hire, train, schedule, and develop line cooks, prep cooks, and dishwashers.
- Build a positive, accountable kitchen culture; coach in the moment and address performance issues directly.
- Maintain proper staffing levels to match forecasted volume and event bookings.
Cost & Inventory Management- Own food cost, labor cost, and waste against budgeted targets.
- Manage ordering, receiving, and inventory across all vendors; build relationships to secure quality and pricing.
- Conduct weekly and monthly inventory counts and report variances.
Safety, Sanitation & Compliance- Maintain a clean, organized, and ServSafe-compliant kitchen at all times.
- Ensure full compliance with local health department, OSHA, and PINZ standards; lead the kitchen through health inspections.
- Enforce proper food handling, storage, labeling, and rotation procedures.
Menu & Quality- Execute the PINZ menu to spec and contribute ideas for specials, LTOs, and event menus.
- Partner with leadership on recipe development, plate costing, and menu rollouts.
- Continuously improve systems, station setups, and prep procedures to increase efficiency and consistency.

REQUIREMENTS- 3+ years of kitchen management or sous chef experience in a high-volume restaurant, entertainment venue, hotel, or banquet operation.
- Proven ability to manage food cost, labor, and inventory to budget.
- ServSafe Manager certification (or ability to obtain within 30 days of hire).
- Can follow recipes, and take a huge amount of pride in your work
- Strong leadership and communication skills; able to motivate a team during a packed Saturday night.
- Experience executing catered/event menus for groups of 20-200+ preferred.
- Working knowledge of POS, inventory, and scheduling systems (Micros, MarginEdge, 7shifts, a plus).
- Available to work nights, weekends, and holidays - these are our busiest times.
