As we continue to expand our culinary offerings, we are introducing a sushi program that reflects the same level of precision, quality, and attention to detail that defines our brand.

Position Purpose

The Sushi Cook plays a critical role in executing Palladino’s sushi program with consistency, precision, and speed. This position requires a strong understanding of sushi preparation, knife skills, and the ability to perform under pressure in a fast-paced, high-volume environment while maintaining top-tier quality and presentation standards.

Key Responsibilities
  • Prepare and execute all sushi menu items according to Palladino’s standards, recipes, and presentation guidelines.

  • Work within the designated sushi station as directed by the Executive Chef and Sous Chef.

  • Maintain a clean, organized, and fully stocked workstation at all times.

  • Ensure all fish, rice, and ingredients are handled, stored, and prepared following strict food safety and sanitation standards.

  • Perform precise knife work, portioning, and fish breakdown as required.

  • Execute dishes efficiently while maintaining consistency during high-volume service.

  • Follow prep lists and ensure all mise en place is completed before service.

  • Monitor product quality and freshness continuously throughout the shift.

  • Communicate clearly with kitchen team members to ensure smooth service flow.

  • Maintain cleanliness of tools, knives, cutting boards, and station throughout the shift.

  • Minimize waste and contribute to food cost control initiatives.

  • Assist with receiving, storing, and organizing deliveries.

  • Support team members across the kitchen when needed.

Qualifications
  • Minimum 3–4 years of experience as a Sushi Cook or similar role in a high-volume restaurant.

  • Strong knife skills and understanding of fish handling and sushi techniques.

  • Ability to work efficiently in a fast-paced, high-pressure environment.

  • Strong attention to detail and commitment to quality and consistency.

  • Knowledge of food safety and sanitation standards (NYC DOH standards preferred).

  • Professional communication skills and team-oriented mindset.

  • Flexible availability, including nights, weekends, and holidays.

  • Culinary training is a plus but not required.

Compensation & Benefits
