Sommelier/Floor Manager – Osaka Chicago


At Osaka Chicago, we are looking for an experienced Sommelier/Floor Manager to lead all wine, sake, and premium beverage operations while actively supervising front-of-house service execution. Ensure excellence in guest experience, beverage profitability, inventory control, staff education, and service standards, in alignment with brand guidelines, corporate structure, and financial objectives.


Key Responsibilities


• Oversee and manage all wine, sake, spirits, beer, and beverage operations, ensuring alignment with brand standards, service quality, and financial objectives.

• Curate, update, and maintain the wine and sparkling wine list in coordination with Sommelier MCK, Franchise Manager MCK, and brand guidelines.

• Lead guest-facing beverage service, advising on food and wine pairings and providing expert-level recommendations to enhance the guest experience and drive sales.

• Manage beverage inventory, cellar organization, weekly counts, ordering, invoice processing, and reconciliation, maintaining COGS within established targets.

• Develop and maintain strong relationships with winemakers, distilleries, and beverage vendors, negotiating pricing, allocations, and training opportunities.

• Supervise and support front-of-house operations before, during, and after service, ensuring smooth execution and operational efficiency.

• Ensure correct beverage storage, rotation, glassware selection, temperature control, and compliance with service standards.

• Lead continuous education and training programs for service and bar staff on wine, sake, spirits, pairings, and beverage sales strategies.

• Develop and coordinate wine or sake events and dinners, ensuring proper planning, execution, and alignment with brand and commercial objectives.


Profile We’re Looking For


  • Minimum 4 years of experience in high-volume, elevated dining restaurants.
  • Proven experience managing beverage programs, inventory, and service teams.
  • Certified accreditation Level 2 from a recognized organization (Court of Master Sommeliers or WSET).
  • Alcohol Awareness Training.
  • Food Manager Certification.
  • State-compliant food handling certification.

Microsoft Office (user level).

Knowledge of POS systems and restaurant management platforms.

Understanding of management indicators, budgets, and P&L statements.
