Meat Store

The Meat Store is looking for an experienced, dependable Sous Chef with meat-cutting experience to join our growing team. This is a hands-on position combining culinary skills, food preparation, meat cutting, and day-to-day kitchen leadership.

We are a locally owned specialty meat store focused on high-quality meats, prepared foods, sandwiches, and exceptional customer service. We’re looking for someone who takes pride in their work, understands proper food handling, and enjoys working with premium ingredients.

Responsibilities

• Cut, trim, portion, and prepare beef, pork, and poultry for retail sale and kitchen use
• Prepare steaks and specialty cuts including ribeyes, New York strips, filets, sirloin, roasts, and other cuts
• Assist with daily preparation of sandwiches, prepared foods, sides, sauces, marinades, and store specialties
• Help develop new menu items, prepared meals, and seasonal specials
• Maintain consistent recipes, portion sizes, presentation, and food quality
• Assist with inventory, product rotation, waste control, and food-cost management
• Maintain exceptionally clean and organized meat-cutting and food-preparation areas
• Follow proper sanitation, food-safety, temperature-control, and cross-contamination procedures
• Help train and supervise kitchen and food-preparation employees
• Step into a leadership role when needed and help keep daily production running smoothly
• Provide friendly customer service and answer questions about meat cuts, preparation, and cooking

Qualifications

• Previous professional meat-cutting experience required
• Previous restaurant, butcher shop, meat department, or commercial kitchen experience
• Sous Chef, Lead Cook, Kitchen Supervisor, or similar leadership experience preferred
• Strong knife skills and knowledge of meat fabrication and portioning
• Knowledge of food safety and sanitation practices
• Ability to work efficiently in a fast-paced environment
• Dependable, organized, and able to work as part of a team
• Comfortable working on your feet and lifting/carrying meat and food products as required
• Must take pride in cleanliness, consistency, and quality

Experience:

• Professional meat cutting: 1 year minimum required
• Culinary/kitchen experience: 1 year preferred
• Kitchen leadership or Sous Chef experience: Preferred
