As a PM Banquet Cook at The Thompson Nashville, you play an integral role in creating memorable dining experiences for weddings, corporate events, private functions, and luxury hotel guests. You will be working under the direction of the Executive Chef and Sous Chefs. You will prepare and execute banquet menus with precision, consistency, and attention to detail. This position requires a strong culinary foundation, excellent organizational skills, and the ability to thrive in a fast-paced, high-volume environment while maintaining the highest standards of food quality, presentation, and sanitation.

KEY RESPONSIBILITIES

• Prepare, cook, and plate banquet menu items according to standardized recipes, specifications, and presentation standards.
• Execute multiple banquet events while maintaining consistency, quality, and timing.
• Prepare ingredients and complete daily mise en place to ensure successful event execution.
• Work collaboratively with the culinary and banquet teams to ensure seamless food service for weddings, corporate events, social gatherings, and hotel functions.
• Demonstrate a strong sense of urgency while maintaining accuracy during high-volume production.
• Follow all food safety, sanitation, labeling, and temperature control procedures.
• Maintain clean, organized, and service-ready workstations throughout each shift.
• Monitor product quality and report any concerns regarding freshness or inventory.
• Properly store, rotate, and label products using FIFO inventory practices.
• Assist with banquet setup, breakdown, and kitchen cleaning responsibilities.
• Support fellow kitchen stations whenever business demands require teamwork.
• Operate kitchen equipment safely and responsibly.

QUALIFICATIONS

Required

• Minimum one (1) year of professional kitchen experience; banquet, hotel, catering, or high-volume restaurant experience preferred.
• Strong knowledge of cooking techniques, food preparation, and kitchen sanitation standards.
• Ability to read and execute standardized recipes consistently.
• Excellent organizational, communication, and time-management skills.
• Ability to multitask while maintaining quality under pressure.
• Ability to stand for extended periods and regularly lift up to 50 pounds.
• Ability to work effectively as part of a collaborative culinary team.
• Open availability, including evenings, weekends, holidays, and varying shifts based on business and event demands, is required.
• Professional appearance and commitment to maintaining high standards of cleanliness and food safety.

Preferred

• High school diploma or GED.
• Previous luxury hotel, banquet, catering, or fine dining experience.
• ServSafe Food Handler Certification (or willingness to obtain).
• Experience preparing large-volume banquet meals while maintaining exceptional presentation standards.

PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:

Mobility and dexterity to move large, heavy objects up to 100 pounds. Manual dexterity to include using kitchen utensils and handling of food items. Ability to stand and walk for periods of at least 8 hours.

Must be able to tolerate industry standard chemicals used for cleaning and sanitizing. Able to work at a fast pace. Must be able to respond to visual and oral cues.
