    Job description

    Job Summary: Responsible for overall quality of the restaurant and lounge areas including service, cleanliness, training and efficiency of entire staff. Also responsible for all financial, administrative, budgetary and inventory controls. Job Responsibilities: Responsible for flawless guest and service operation of the entire restaurant facility and lounge areas.

    Manage day to day operations of the entire restaurant facility and lounge, to ensure guest expectations are exceeded by the Gaylord service standards and procedures including dealing with guest comments and concerns, special needs or accommodations. Responsible for communicating and upholding the department to be in compliance with hotel and company, administrative, financial, service standards, safety policies and procedures. This includes any and all areas listed in the company handbook.

    Maintain positive and professional working relationship with all other hotel departments. Manage STAR employees, hiring, scheduling, coaching and counseling, evaluating, training and mentoring for future promotion possibilities. Encourage and actively participate in the career training, education and advancement of STAR employees and staff members.

    Ensure overall cleanliness, maintenance and appropriate use of company assets and equipment in front of house and heart of house areas. Manage all daily events and special Glass Cactus events to ensure a flawless service and profitable operation. Coordinate with entertainment department to ensure all scheduled entertainment events are scheduled and operated to meet the Gaylord standards of expectation in service and quality levels.

    Responsible for preplanning, managing and execution of convention group large party events held in Glass Cactus. Budgets and forecast group revenues according to established guidelines. Ensure proper use of restaurant and function space, and overall event space.

    Check all functions prior to event for follow through and communicate with client to ensure a flawless guest experience. Execute budgetary responsibilities including forecasts, labor forecasting, profit and loss accountability, cost control, food, beverage and supply inventories and purchasing. Handle administrative functions such as analyze and respond to reports, meetings, quality assurance areas for STAR satisfaction, guest satisfaction and financial obligations for the department.

    Maintain and exhibit a strong knowledge of food and beverage and trends among the food and beverage industry. Explore new revenue opportunities while controlling expenses. Control inventory par levels of food, beverage and supplies.

    Establish methods of inventory control and follow proper ordering procedures for purchasing. Perform other duties as assigned by the food and beverage leadership. Job Qualifications: High School diploma or equivalent required.

    Associates+ experience or Bachelor degree in related field preferred. Three- Five years of progressive food and beverage experience,preferably with 1-2 years in an upscale food and beverage management. TABC Card and Serve Safe Certification preferred.
