Job description

  • Expo (Expeditor) (The Coordinator):
    • Manage the Pass: Ensures food is accurate, properly garnished, and sent out in the correct order.
    • Communication: Relays information between chefs, line cooks, and service staff.
    • Timing: Syncs fire times so all meals for a table are finished simultaneously.
    • Quality Control: Ensures every dish meets kitchen standards before it leaves the kitchen.
  • Line Cook (The Creator):
    • Prep Work: Prepares stations with necessary ingredients and tools.
    • Cooking: Executes dishes according to recipes and station assignments.
    • Maintenance: Cleans their station and maintains inventory. [1, 2, 3, 4, 5, 6, 7, 8]
