About the Role
At Escondido Golf & Lake Club, our kitchen is where the Escondido Experience begins. As a Line Cook, you'll work alongside a talented culinary team to deliver beautifully prepared meals that reflect the quality and care our Members expect every time they dine. What You'll Do
Set up and stock your station with all necessary ingredients and equipment before service
- Prepare food to exact specifications as directed by the Executive Chef or Sous Chef — including vegetable prep, butchering proteins, and sauce production
- Execute menu items in coordination with the culinary team using a variety of equipment, techniques, and methods
- Work clean to ensure proper sanitation practices are met and clean, wholesome plates are produced for service
- Always maintain a sanitized and orderly kitchen environment
- Ensure all food and items are stored properly and labeled
- Restock inventory appropriately and make management aware of any low inventory items
- Check quality and quantity of ingredients and report any shortages before service begins
- Ensure food comes out simultaneously, in high quality, and in a timely fashion
- Comply with all nutrition, sanitation, and safety standards and regulations
- Maintain a positive and professional approach with Members, guests, and coworkers
- Perform additional tasks as assigned and/or requested by fellow Prep Cooks, Stewards, or Banquet Chefs

Requirements:
What You Bring
- Prior line cook experience in a restaurant, hotel, or club kitchen preferred
- Critical thinking on the fly — able to evaluate situations and find solutions under pressure
- Strong attention to detail and a commitment to consistency in quality and timing
- Ability to work efficiently and accurately in a fast-paced, team-oriented environment
- Familiarity with a wide range of ingredients, cooking methods, and kitchen equipment
- Food Handler certification (required or willingness to obtain)
- Clear, professional communication skills — verbal and written
- A team-first mindset and genuine desire to support your fellow crew
- Flexibility to work evenings, weekends, and event shifts
- Ability to stay cool, calm, and collected in high-pressure or challenging situations
