We are seeking an Executive Sous Chef to join the leadership team at Café Fiorello DC. This role is ideal for a driven culinary leader who can help lead the kitchen, develop the team, and execute high-volume, high-quality Italian cuisine. As an Italian restaurant, strong knowledge of Italian culinary traditions, ingredients, and techniques is essential for success in this role.
• Serve as the second-in-command, partnering with the Executive Chef to oversee daily kitchen operations and maintain the highest standards of quality and consistency.
• Lead and mentor the culinary team, including Sous Chefs, line cooks, and prep cooks, fostering a culture of teamwork, accountability, and excellence.
• Manage kitchen performance, supporting scheduling, inventory, ordering, labor efficiency, and food cost controls.
• Ensure strict food safety and sanitation standards while maintaining an organized and efficient kitchen.
• Execute Café Fiorello’s culinary standards, including our antipasto bar, house-made pastas, fresh seafood, and signature thin-crust pizzas.
• Support the pre-opening process and step into full kitchen leadership when the Executive Chef is not present.
What We’re Looking For
• 3-5 years of experience in high-volume, upscale kitchens, with 2-3 years in a senior leadership role such Senior Sous Chef preferred.
• Strong knowledge of Italian cuisine and classic techniques, with a genuine passion for quality ingredients and culinary excellence.
• Proven leadership ability, with experience supervising chefs and large kitchen teams in fast-paced environments.
• Strong operational skills, including labor management, ordering, inventory control, food cost management, and sanitation compliance.
• A confident, solutions-driven leader who thrives under pressure, leads by example, and maintains strong kitchen leadership and operational excellence at all times.
