Our kitchen is fast-paced, professional, and team-driven, with a strong emphasis on consistency and quality.

Position Summary

We are seeking a skilled and motivated Prep Cook to join our culinary team. The ideal candidate is passionate about food, disciplined in execution, and thrives in a high-performance kitchen environment. You will be responsible for preparing, cooking, and plating dishes according to Brick Lane’s standards while maintaining cleanliness, organization, and efficiency.

Key Responsibilities

  • Prep dishes according to standardized recipes and plating guidelines
  • Prepare mise en place efficiently before service
  • Maintain consistency in taste, quality, and presentation
  • Work all stations as assigned (grill, sauté, tandoor, garde, etc.)
  • Follow food safety and sanitation standards (ServSafe guidelines)
  • Maintain a clean and organized workstation
  • Assist with inventory, prep lists, and stock rotation (FIFO)
  • Communicate effectively with chefs and team members during service
  • Handle high-volume service with speed and accuracy
  • Assist in receiving and inspecting deliveries

Qualifications

  • 1–3 years of professional kitchen experience (Indian cuisine experience preferred but not required)
  • Strong knife skills and understanding of cooking techniques
  • Ability to work in a fast-paced, high-pressure environment
  • Knowledge of food safety and sanitation standards
  • Ability to lift 40+ lbs and stand for extended periods
  • Team-oriented with a positive attitude
  • Open availability, including nights, weekends, and holidays

Preferred Skills

  • Experience with tandoor or live-fire cooking
  • Familiarity with spice blends and Indian flavor profiles
  • Fine dining or upscale casual experience
  • Culinary school training is a plus
