Job description

Screaming Tuna is a modern Sushi & Asian Bistro with a passion for bold flavors, sustainability, and unforgettable dining experiences. Our flagship location sits right on the Milwaukee Riverwalk, with a second home in the heart of the Mequon Public Market. We’re proudly Wisconsin’s only Monterey Bay Aquarium Seafood Watch partner, serving sushi and Asian-fusion dishes that are as responsibly sourced as they are delicious.

As a Host / Expo, you’re part greeter, part traffic controller, part backstage coordinator—and a major part of what keeps the show running smoothly. Whether you’re welcoming guests or ensuring dishes hit the table with perfection, you set the tone for service and help create a truly memorable experience.

About the Role:

This is a hybrid role where you’ll work both front-of-house (as Host) and back-of-house (as Expo) depending on the shift and restaurant needs. It’s perfect for someone who’s organized, detail-oriented, people-savvy, and wants to learn both sides of restaurant operations.

Key Responsibilities:As Host:
  • Warmly greet and seat guests with a friendly and professional attitude

  • Manage reservations and waitlists using digital tools (OpenTable or similar)

  • Keep the dining room flow smooth by coordinating table turns with servers and managers

  • Maintain cleanliness and organization of the host stand and entrance area

  • Be the first and last impression for every guest—make it a great one!

As Expo (Expeditor):
  • Act as the final checkpoint between kitchen and table—checking for accuracy, presentation, and timing

  • Communicate clearly between BOH (kitchen) and FOH (servers) to ensure smooth service

  • Organize and prioritize tickets to help keep the kitchen running on time

  • Assist in packaging takeout and delivery orders as needed

  • Keep expo station clean, stocked, and running efficiently

What We’re Looking For:
  • Excellent communication and multitasking skills

  • Friendly, approachable, and confident under pressure

  • A sharp eye for detail—especially when checking plates before they hit the table

  • Previous experience in host or expo roles is a plus, but we’ll train the right person

  • Ability to work evenings, weekends, and holidays

  • Must be 16+ to host, and 18+ to work expo (due to proximity to kitchen and alcohol service)

Why Join Team Tuna?
  • Work in a fast-paced, upbeat, and respectful team environment

  • Learn front- and back-of-house skills that can grow into other roles

  • Competitive pay + tips for expo shifts

  • Staff meals, employee discounts, and flexible scheduling

  • Be part of a team that values sustainable sourcing, creativity, and hospitality

  • Opportunities for advancement at one of Milwaukee’s most celebrated sushi spots
