Position Summary

The Busser plays an essential role in delivering a seamless, highly polished dining experience. This position supports the service team by maintaining pristine dining spaces, anticipating the needs of guests and servers, and ensuring every detail of the dining room meets Spago's elevated standards.

Essential Job Functions
  • Provide professional, polished, warm, and engaging service to every guest
  • Maintain the dining room and service areas to exceptional standards of cleanliness, organization, and presentation
  • Set up and stock assigned work areas according to elevated fine-dining service standards
  • Inspect assigned stations and tables to ensure impeccable setup and presentation after and throughout service
  • Anticipate the needs of servers and guests and proactively provide support throughout the dining experience
  • Clear completed courses with precision, discretion, and appropriate service timing
  • Replenish utensils, glassware, water, bread, and other items while maintaining a seamless guest experience
  • Reset tables efficiently and precisely according to established Spago service standards
  • Serve coffee, tea, water, bread, butter, and other food and beverage items as directed
  • Support the service team throughout each course while maintaining an organized and efficient work area
  • Maintain service stations, fill ice bins, and restock items according to established par levels
  • Retrieve, polish, organize, and properly store china, silverware, glassware, and stewarding items
  • Complete all opening, closing, and side-work responsibilities to the highest standard
  • Maintain awareness of the dining room and respond quickly to changing service needs
  • Consistently uphold Spago's standards for hospitality, cleanliness, timing, presentation, and attention to detail
  • Perform other job-related duties as assigned
Required Experience
  • Minimum of 1–2 years of Busser or comparable front-of-house experience, preferably in a fine-dining, luxury hospitality, or Michelin-recognized environment
  • Experience working in a Michelin recognized restaurant environment is strongly preferred
  • Strong understanding of dining room operations, service sequence, and fine-dining standards
  • Demonstrated ability to maintain exceptional attention to detail while working with urgency
  • Genuine passion for hospitality and delivering memorable guest experiences
  • Self-motivated, dependable, and committed to continuous improvement
  • Ability to anticipate needs and work proactively as part of a highly collaborative service team

Physical Requirements

While performing the duties of this role, team members are regularly required to stand for extended periods; bend, twist, kneel, crouch, or stoop; and reach with hands and arms, including overhead. The role involves frequent handling of service equipment and tools and requires lifting and carrying up to 25 pounds regularly and up to 40 pounds occasionally. Visual requirements include close vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

Work Conditions

This position operates primarily indoors within the front-of-house and kitchen environments. Team members may be exposed to heat, hot foods, steam, cleaning chemicals, fumes, equipment, and moderate to high noise levels depending on service volume and equipment use. Evening, weekend, and holiday shifts are required.
