Job description

ACE Brooklyn, Le Le's Roman is looking for a Sous Chef whois responsible for helping to prepare and design all food and drink menus, producing high quality plates in both design and taste, and ensuring the kitchen operates in a timely way that meets LDV quality standards.

Responsibilities:

  • reate and organize all recipes in a professional manner

  • ffectively organize tasting for menu changes

  • rite clear cooking procedures and a photo log of each dish
  • E
  • nsure consistency of recipe in the restaurant

  • anage Food Cost and Labor Cost in keeping with approved budgets
  • C
  • ontrolling and lowering Food Cost and Labor Cost
  • L
  • iaison of LDV towards Clients, Guest and Employees
  • T
  • rack invoices for billing
  • F
  • ile monthly DSR Reports

  • aintain monthly meetings with staff

  • reate policy and procedures for all cooks to maintain

  • xecute Special Event Menus

    Education/Experience:

  • - 5 years' experience in fine dining and high-volume kitchen environments

  • igh School Diploma or GED
  • B
  • achelor's degree in business or hospitality administration or the Culinary Arts is preferred, but not required

  • YC Food Handlers Certification or ServSafe Certification (CFPM) as required by state laws
