Job description

Description:

Responsible for performing numerous tasks on recently slaughtered turkeys or tasks that support the overall operations within the department

Essential Duties, Functions, and Responsibilities:

The Evisceration Associate performs tasks to clean and eviscerate (remove the organs of) recently slaughtered turkeys to prepare for secondary and further processing.

Inspect the birds as they move down the line.  Check for bruises, scabs, tears, feathers, broken bones, etc.

Trim the bird as needed.  Remove scabs, feathers, slice or remove bruises, and remove parts with broken bones (wings, drums, etc.). Draw the heart and liver for easier access to remove them, so that they may be harvested.

Throw away the condemned parts either in a red barrel or onto the condemned parts conveyor belt.

Drop the salvage parts (wings, drums, etc.) onto the salvage conveyor belt.

Hang back birds or parts on the hang-back rack as required.

Knowledge, Skills, and Abilities:

Proper PPE usage: The employee should be aware of the required protective equipment (Eye Protection, Hearing Protection, Arm Guard, Mesh Glove, Kevlar Glove, Mesh/Hex Armor Apron).

Employees may need to pad the fingertips of the non-knife hand to protect the skin from rubbing against the steel glove and the neck bones.

Employees will need to be instructed in the proper use of the knife sharpener located at the workstation.

Perform varying manual repetitive tasks with the assistance of tools, such as knives and scissors, to remove organs and parts from slaughtered turkeys.

Physical Requirements:

 Standing for long periods of time (up to 4 hours)

Lifting, carrying, pushing, and pulling up to sixty (60) pounds

Ability to grip, grasp, twist wrists, and hands through the course of the workday

Ability to wear all personal protective equipment (PPE) and hygiene equipment, including but not limited to bump cap/hard hat, steel-toed footwear, hearing protection, smock, and gloves

Working with scissors or knives

Have the physical ability to lift, carry, and hang birds as required.

Inspect the exterior of the birds for defects.

Trim or remove only those parts necessary to ensure a wholesome bird.  Do not over-trim the birds.

Do not trim parts from Osteo (double mark on the back) birds.

Sanitize knives. Warning: The sanitizer’s water temperature is 180 degrees -for sanitizing knives only – Do not place body parts or equipment (Mesh Gloves) inside or on top of the sanitizer.

Monitor and inspect feces on the back of the birds. If fecal matter is found, pull the birds off the line and hang them on the rack to be reprocessed.

Breast trimmers will inform the back trimmers if any feces are found on the breast or inside the bird's cavity, so back trimmers can pull it off the line and hang it on the rack to be reprocessed
