Experience:
Required:
  • Knowledge of cooking techniques, procedures and use and care of kitchen equipment and utensils

Preferred:
  • Knowledge of quantity food preparation and service; One year as a cafeteria helper in the CCISD Food Services Department

Personal Required:
  • Able to communicate with students, teachers, and food service personnel

Function
Under the supervision of the Training Manager for Food Services, work as a manager trainee in the training school performing all assigned functions in food preparation, service and clean up. Learn and perform all of the cafeteria manager's duties and substitute as a cafeteria manager in schools where the manager is absent.

Responsibilities:
  • Work as a manager trainee in the training school, rotating through all kitchen duties.
  • Learn and perform all of the cafeteria manager's duties under the supervision of the training manager.
  • Substitute as a cafeteria manager in the event the manager is absent.
  • Learn to maintain all records as required by CCISD and the Texas Department of Agriculture.
  • Responsible for following standardized recipes.
  • Prepare employee work schedule.
  • Prepare serving counter set up.
  • Set up serving counter according to steamtable diagram.
  • Serve food using effective time and motion techniques.
  • Work in dish room scraping, rinsing, racking, and washing trays and silverware.
  • Wash and sanitize pots and pans.
  • Perform assigned cleanup of kitchen, dish room, and dining room, including equipment and floors.
  • Cashier and/or help replenish food daily during serving periods. Supervise other cashiers.
  • Prepare all daily reports, records, and deposits.
  • Ensure that all money collected is properly deposited on a daily basis.
  • Ensure all food received is properly accounted for as sold, leftover, or scrapped.
  • Responsible for completing the monthly physical inventory.
  • Responsible for the final daily cleaning of kitchen, dish room and dining room.
  • Responsible for the proper closing and securing of the cafeteria at the end of the day.
  • Lift or carry; 1 to 40 lbs. frequently, 41 to 60 lbs. occasionally with assistance and proper lifting techniques.
  • Bend, stoop and reach above shoulder level occasionally. Work with machinery frequently.
  • Climb ladders, stairs, and ramps occasionally.
  • Walk and stand frequently, sit occasionally.
  • Drive frequently.

ADDITIONAL DUTIES:
  • Perform other job-related duties as assigned.

SUPERVISORY RESPONSIBILITIES:
  • Supervises kitchen helpers and aides when serving as a substitute manager.
