DESCRIPTION
We're hiring Prep Cooks to join our team!
Before you start your day, make sure you are ready for work and following our uniform and safety and sanitation guidelines including washing your hands. You will use your daily Prep Sheets to set priorities and make sure everything is ready on time. Use the Prep Cook & Dishwasher Checklists to start and organize your shift. These include your sidework and your responsibilities. Some of your important responsibilities include:
  • Setting up the dish, prep, storage, and outside areas
  • Maintaining the dish, prep, and storage, and outside areas
  • Closing the dish, prep, and storage, and outside areas
  • Washing, drying, and storing wares
  • Completing your prep list
  • Preparing food to order
  • Controlling waste and spoilage
  • Cleaning, sanitation, safety, and security
  • Being a great team player

Setting up the dish, prep, storage, and outside areas
Before we open, and before the next shift, our areas should be 100% organized, clean, and ready for service. Make sure that:
  • All necessary equipment is on and working correctly
  • All trash from day before, if any, is taken outside
  • All walkways, floors, and doors are clear and safe
  • Sanitizer solution, mop bucket, floor mats, hand sinks, and trash cans are ready
  • Restrooms are clean and stocked
  • Storage areas are organized and ready for any deliveries
  • Sinks are set-up for dishes and/or prep
  • You have all the tools and supplies needed for the day
  • Outside is clean, attractive, and in good shape for our guests
  • The back door, loading, and dumpster areas are clean, organized, and secured properly
  • You have today's checklists and prep sheets

Maintaining the dish, prep, and storage, and outside areas
This can be the most difficult part of your job especially when we're busy. Immediately ask for help before you get behind. As part of the effort to work fast, efficiently, and to clean as we go, make sure that:
  • The dishwasher, sink, and refrigeration temperatures stay in correct ranges
  • All food is handled and stored properly
  • Trash cans are emptied before being too full
  • All walkways, floors, and doors are clear, safe, and free of obstacles
  • Sanitizer solution, mop bucket, floor mats, hand sinks, and trash cans stay correct
  • Restrooms stay clean and stocked
  • Storage areas stay organized and deliveries are put away quickly and properly
  • Sinks are set-up for as needed and cleaned and sanitized between uses
  • Outside stays clean, attractive, and in good shape for our guests
  • The back door, loading, and dumpster areas stay clean, organized, and secured properly
  • You are using and updating today's checklists and prep sheets
