Job description

QC Technician

Job Description

Job Duties:

1. Pre op (back up).

2. Check, monitor and record room temperatures in the raw areas, blast freezer, finish good

holding freezer.

3. Scale calibration on the raw areas (back up for pre-op).

4. Thermometer Calibration (back up).

5. Verify the cleaning procedure in the beef room before starting up.

6. Verify procedure for the beef preparation, this includes temperatures and formulas.

7. Collect Lab sample for trimming send it to the lab (Daily)?

8. Verify production processing procedure are being followed, Injection recipes, Meat sizes,

ingredients.

9. Verify safety procedures and GMP’s are being followed.


Gyros Room

1. Verify production schedule and processing procedure are being followed. meats,

formulation sheet, ingredients.

2. Production backup when they are short employees (fat analyzer sheets).

3. Hourly temps on the gyro’s cones.

4. Batch verification (meat temperatures, lot codes for the meats, mix time amount of water)

5. Follow any deviations on the batches.

6. Follow any special formulas or export.

7. Condensations, Safety GMP’S

8. Verify that meat rotation is follow.

9. Verify rework is use.

10. Follow Halal meat for formulas tag and place on hold when exports are requested.

11. Verification of incoming items.

12. Tag receiving meats, take temperatures when meats not in the cooler.

13. Send meat sample to the lab when not tested nor COA available.

14. Maintain halal certificates for meat and COA’s.

15. Generate work orders to report any issues in the machinery.


Packaging Room

1. Follow packaging schedule.

2. Verify temps for the cones.

3. Verify that the right cones are packed for the correct customers.

4. Follow cones when they are exported.

5. Inspect the cones when any discrepancies are found.

6. IQF daily QC checks when room is in production.

7. Hamburger Room daily checks when in use.

8. Fill in the correct documents (office).

9. Pre op all Raw Production Rooms.

10. CCP’s room temperatures.

11. Hold book updated.

12. Complete scale form after verifying/calibrating Scales.

13. Provide training to new employees.
