We're hiring a Kitchen Supervisor for Phantom Ranch to Live. Work. Explore. at the south rim of the Grand Canyon!
Job Summary:
Overall operation of the Phantom Ranch kitchen.
The Details:
Position Type: Full-Time, Year-Round
Pay: $18.90 per hour
Schedule: Typical schedule is 40 hours, 5 days per week (may include weekends, evenings, and holidays)

Responsibilities
  • Oversee kitchen operation to prepare guest and employee meals including sack lunches and special requests.
  • Prepare meals with conformity to specs including portion control and guest reservation count.
  • Provide training for all staff in food production and kitchen operations. Assist the Manager to prepare evaluations for cooks.
  • Responsible for maintaining Serve-Safe HACCP food sanitation program.
  • Work with Phantom Ranch Manager to control inventory and food costs.
  • Responsible for submitting the weekly food order, taking into account seasonal business levels and special requests.
  • Prepare and submit month end inventory for all food and beverage items.
  • Check food items delivered by packers and utilize first in, first out product rotation.
  • Report any kitchen equipment problems to the Ranch MOD and the engineering department managers, as appropriate.
  • Ensure that all safety and risk management policies and procedures are being adhered to, including the use of personal protective equipment and SDS sheets.
  • Adhere to all Ranch environmental policies.
  • Work with Ranch Manager on purchase requests for special items and/or equipment.
  • Accompany park Sanitarian and/or public health service evaluators on inspections of kitchen facilities; and correct any discrepancies noted.
  • Able to perform and fill in as MOD when needed.
  • Assist the Ranch MOD to convert the kitchen equipment and procedures to water conservation mode during pipeline breaks/repairs.
  • Assist the Ranch Manager to establish procedures that will be used during water and power outages, scheduled and non-scheduled.
  • Other duties as assigned.

Qualifications
  • Previous ala carte or batch cooking experience in a working lead or supervisory capacity.
  • Thorough knowledge of all areas of kitchen operation including, prep work, food production, portion control, sanitation and ordering.
  • Ability to pass ServeSafe HACCP food sanitation class.
  • Ability to work in extreme heat during summer months.
  • Ability to do physical aspects of the position including bending, lifting and standing for long periods of time.
  • Able to work shift of ten to twenty consecutive days.
  • Able to hike from Ranch to rim and back under own physical power.

Physical Requirements include:
Constantly: Stand, walk, handle, reach, lift/carry up to 20lbs.
Frequently: Reach, squat/kneel, bend.
Occasionally: Sit, lift/carry up to 100lbs, push/pull up to 40lbs.
