Job description

Job Title: Senior Production Manager


Department: Production


Reports To: Plant Manager


Location: Alsip+


FLSA Status: Exempt


Job Summary:


The Senior Production Manager is responsible for leading daily operations of the bread production line(s) to ensure high-quality output, efficiency, safety, and adherence to production schedules. This role manages a team of supervisors and line staff, oversees the use of equipment and raw materials, and ensures compliance with food safety and quality standards. The initial focus of this role will primarily be the donut division but there may be an overlap in the bread division as well.


Key Responsibilities:



  • Supervise, train, and mentor production supervisors and hourly employees in the bread division.

  • Ensure production goals, quality standards, and safety protocols are met or exceeded.

  • Plan and adjust production schedules to meet customer orders and minimize downtime.

  • Monitor key performance indicators (KPIs) such as yield, waste, labor efficiency, and throughput and be capable of reporting data on a daily basis.

  • Collaborate with Maintenance, QA, Sanitation, and Supply Chain to ensure smooth and efficient operations.

  • Conduct RCA's (Root Cause Analysis) to identify and provide corrective actions.

  • Ensure compliance with all food safety and sanitation requirements including GMP, HACCP, and GFSI standards.

  • Participate in continuous improvement initiatives, including process optimization and cost reduction efforts.

  • Manage raw material inventory and usage to minimize waste and ensure product consistency.

  • Maintain accurate records related to production output, labor, and downtime.

  • Lead safety initiatives and investigate incidents as needed.

  • Foster a culture of accountability, teamwork, and operational excellence.

  • Other duties and tasks as assigned by management.


Qualifications:



  • 5+ years of experience in food production or baking manufacturing, with at least 3 years in a leadership role.

  • Strong knowledge of bread-making processes, equipment, and quality control standards preferred.

  • Experience with GMP, HACCP, OSHA, and other relevant safety and compliance regulations.

  • Demonstrated leadership and team development skills.

  • Ability to analyze data and make sound operational decisions.

  • Excellent organizational, communication, and problem-solving skills.

  • Proficiency with production software, ERP systems, and Microsoft Office Suite.

  • Must be proficient in English and Spanish both verbal and written.


Physical Requirements:



  • Ability to stand, walk, and work in a production environment for extended periods.

  • Must be able to lift a minimum of 50+ pounds.

  • Stamina to work 50+ hours per week.

  • Exposure to varying temperatures and noise levels typical of a bakery facility.

  • Must wear required personal protective equipment (PPE).


Schedule: Full-time; must be available to work flexible hours including early mornings, evenings, weekends, and holidays.
