SUMMARY OF FUNCTIONS: Responsible for preparing meals and other food as well as assisting the Chef. He takes over during his absence. MAIN RESPONSIBILITIES: Replaces the chef according to the established schedules; Prepares, seasons, cooks and determines the size of portions, according to established menus, so that meals are prepared on time and within budgets. Distributes, reviews and supervises in the absence of the Chef, the work of the staff assigned to table and counter service and to the maintenance of the kitchen and the dining room. Directs and supervises and coordinates, in the absence of the Chef, the work of all kitchen and dining room staff. This may include disciplinary action as required by residence standards and policies. Ensures, according to norms and standards, the quality of the preparation of meals, snacks, salad bar, etc. Ensures, according to the practices, the distribution and use of surplus production in order to avoid food losses. Ensures that work areas meet cleanliness and sanitation standards by ensuring that staff perform maintenance and cleaning tasks. Ensures the maintenance, according to the practices, of the equipment in order to ensure their proper functioning. Makes sure to always have the necessary inventory for food production. Completes the appropriate forms and documents, drafts the correspondence and current reports required according to the information at his disposal, in order to ensure the necessary follow-ups Performs, as needed, all or part of the tasks pertaining to any other equal or lower job category. TRAINING AND EXPERIENCE REQUIRED: Relevant training in the field or relevant experience in the job title; MAPAQ manager.
