TITLE:
Quality Assurance Production Manager
SUMMARY:
Provide safe, wholesome, and specified food products to our stores, customers, and operating partners. Ensure all products leaving TooJay's master prep kitchen are handled safely, following all government and USDA regulations, industry standards, and are safe for re-sale. This includes, but is not limited to full compliance regarding handling, cooking, and cooling procedures; general storage of all goods and packaging; proper methods and procedures for all sanitation and cleaning.
RESPONSIBILITIES:
β€’ Develop, implement and manage quality assurance programs, policies and procedures to ensure compliance with regulatory and industry standards
β€’ Ensure compliance with relevant food safety regulations such as HACCP, GMP, and FSMA
β€’ Collaborate with cross-functional teams to ensure product quality is maintained throughout the entire manufacturing process, from raw materials to finished products
β€’ Manage and analyze quality data and metrics to identify areas for improvement and implement corrective actions
β€’ In complying with USDA regulations and industry standards, for food safety protocols you will be responsible for keeping daily logs of temperatures such as:
β€’ All cooler and freezer temperatures
β€’ Ware washing final sanitizing temperatures
β€’ Food receiving temperature logs
β€’ Dry food storage rooms
β€’ Cooked foods heating and cooling logs, for example:
β€’ Cooked foods are:
β€’ cooked to proper temperatures by batch
β€’ cooled down in proper time limits
β€’ packaged and labeled correctly
β€’ stored at proper holding temperature for shipment
β€’ Cold prepped foods are:
β€’ monitored for temperature integrity
β€’ re-call procedures in place for all products we sell
β€’ sanitation of facility
β€’ log of all washing devices sanitation temperatures
β€’ proper use of chemicals including storage
β€’ General cleanliness of facility maintained in tour quality condition
β€’ Waste disposal is handled according to local and federal laws
β€’ Insect and rodent protections in place and maintained
β€’ Employee safe food handling:
β€’ Ensures all employees have a valid food handlers' certificate
β€’ Ensure all employees are trained to cooking and cooling standards
β€’ Safe chemical handling and storing
Requirements:
*Bachelor's degree in Food Science is recommended; or a combination of practical experience and education will be considered as an alternative
β€’ 5+ years of experience in quality assurance in the food industry, with a strong background in food safety, quality control, and regulatory compliance
β€’ Strong understanding of HACCP, GMP, and FSMA regulations
β€’ Strong analytical skills with the ability to analyze complex data sets
β€’ Knowledge of computer software, including Microsoft products and other relevant software
β€’ Proficient in the following dimensions of restaurant functions:
β€’ food planning and preparation, purchasing, sanitation, security, company policies and procedures, personnel management, recordkeeping, and preparation of reports
β€’ Full understanding of USDA laws and regulations for operating a master prep kitchen including all cooking and cooling regulations
β€’ Must possess a valid driver's license
β€’ Current Manager Serve Safe Certification (or willing to obtain within the first 30 days)
β€’ Ability to lead team
β€’ Clearly conveys information and ideas
β€’ Maintains composure and objectivity under pressure; Effective at active listening to understand and clarify concerns or issues raised by internal teams and external guests/vendors/consultants, etc.
β€’ Shows initiative in job performance, including anticipating, preventing, identifying, and solving problems as necessary
β€’ Ability to plan and organize
β€’ Understand and adheres to company policies and procedures
