Job description

Hogsalt is seeking a dedicated and experienced Full Time Lamination/Viennoiserie Baker ($22-$24/hour) to join our team!  This team member will support lamination and our 'Bake off' needs.  This team member will work the lamination station 2-3 days a week, and the 'bake off' station the reminder where they assist in the creation of croissants, cookies, pies etc.

Position Summary: The Lamination position reports directly to the Bakery Operations Manager and Executive Pastry & Baking Director. The Lamination position will take lead of shaping our viennoiserie items to ensure consistency. They will begin their day by mixing required doughs for the days production and then determine when croissants have been properly proofed to bake. They will begin daily production of croissants, pie doughs, sheeted cookies, and other like menu items. The lamination station will assist in daily bread productions with the bread production team, as needed. 

Experience & Qualifications:

  • At least 2 years of professional baking experience in bread or lamination production is required.
  • Open availability including mornings (5am-2pm CT), weekends, and holidays.
  • Ability to stand, walk, and move throughout the shift, including frequent bending, lifting up to 50 pounds, and stooping.
  • Ability to coordinate multiple activities with attention to detail.
  • Passion for excellence, superior service standards, and a positive attitude.
  • Must have a valid Food Handler Certificate prior to start date.

Duties & Responsibilities:

  • Responsible for Viennoiserie/Lamination production (i.e: Dough production, lamination, shaping, proofing, baking)
  • Set up and stock station with all necessary supplies, ensuring proper inventory control.
  • Cook and prepare menu items in cooperation with the kitchen/bakery team according to the Hogsalt Recipe Index, ensuring food quality and time standards are always met.
  • Answer, report to, and follow instructions from Bakery Operations Manager, Baking & Pastry Director, Executive Chef, or other leadership.
  • Properly clean and break down station at the end of service, ensuring all food handling and food storage standards are met.
  • Ensure that the kitchen operation procedures and hygiene meet food safety standards and regulations at all times.
  • Maintain a positive and professional approach with coworkers, leadership, and vendors.
  • Perform shift change and/or opening and closing duties.

Experiencia y Cualificaciones:

·       Se requiere al menos 2 años de experiencia profesional en panadería o laminación.

·       Disponibilidad horaria, incluyendo mañanas (5:00 a. m. a 2:00 p. m. CT), fines de semana y festivos.

·       Capacidad para estar de pie, caminar y moverse durante todo el turno, incluyendo agacharse con frecuencia, levantar hasta 23 kg y agacharse.

·       Capacidad para coordinar múltiples actividades con atención al detalle.

Funciones y Responsabilidades:

·       Cocinar y preparar los platos del menú en colaboración con el equipo de cocina/panadería de acuerdo con el Índice de Recetas de Hogsalt, garantizando siempre el cumplimiento de los estándares de calidad y tiempo de los alimentos. • Responder, reportarse y seguir las instrucciones del Gerente de Operaciones de Panadería, Director de Panadería y Pastelería, Chef Ejecutivo u otro equipo directivo.

·       Limpiar y desmontar adecuadamente la estación al final del servicio, asegurándose de que se cumplan todas las normas de manipulación y almacenamiento de alimentos.

·       Asegurarse de que los procedimientos operativos y la higiene de la cocina cumplan con las normas y regulaciones de seguridad alimentaria en todo momento.

·       Mantener una actitud positiva y profesional con los compañeros, el equipo directivo y los proveedores.
