This role will be located at one of Discovery Land Company's locations: The Hills and Dune Deck Beach Club, set in The Hamptons, New York.
Dlv Hamptons is seeking CULINARY INTERN/TRAINEES to join the Food & Beverage - Culinary Department. Seasonal dates are May 1 to Oct 1, 2027.
The Culinary Intern/Trainee will have a thorough understanding of all items on the menu and daily specials, ensure spoiled or damaged serving utensils are not used and watch particularly for cracked or chipped China, glassware; prevent the use of contaminated products in any phase of food preparation, and ensure all government, safety, health, and security standards are always complied through the department. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

  • Intern will ensure all dishes are uniform made to specifications set out by the Culinary Director or Executive Chef.
  • Flexibility to work rotating shifts at all outlets at the club across all stations in the kitchen.
  • Responsible for the quality of all food items prepared in the kitchen and ensures standard recipes are being followed on a consistent basis.
  • Assist with preparations of items to include but not limited to chopping vegetables, butchering meat, and preparing sauces.
  • Maintain cleanliness of the kitchen throughout the day with light housekeeping tasks such as sweeping, cleaning counters, and garbage disposal.
  • Demonstrate sense of urgency for responding to guest needs during all interactions.
  • Perform daily stocking and re-stocking of all kitchen items as needed throughout the day with raw materials and ingredients.
  • Ensure all government, safety, health, and security standards are complied through the department at all times.
  • Monitor expiration of perishable items and inspect ingredients prior to use.
  • Maintain all equipment to ensure it is properly maintained and handled, and report any safety or maintenance concerns promptly to the Culinary Director or Executive Chef.
  • Attend department meetings and trainings, as necessary.

Qualifications

  • Enrollment in an accredited Culinary or Hospitality program with a college/university affiliated with Discovery Land Co.
  • Six months related experience in back of the house of foodservice outlet.
  • Knowledge of health and safety regulations and the ability to apply them in the workplace. ServSafe certified.
  • Safety conscious at all times to avoid injury to self and others.
  • Attention to detail and the ability to maintain a high standard of service.
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Ability to work a flexible schedule, including evenings, weekends, and holidays and an ability to work a shift greater than eight (8) hours in length.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
