Our Line Cooks are integral to our culinary operations. Because our kitchens make everything from scratch, our Line Cooks are responsible for efficiently portioning ingredients and preparing our recipes to standard. They also adhere to our quality and sanitation protocols to ensure the highest food safety. WHAT OUR LINE COOKS DO:
  • Prepare the basic components of each dish on our menu using our proven, standard recipes
  • Prepare and cook a variety of meats, seafood, poultry, and vegetables using a variety of kitchen equipment and techniques
  • Stock and maintain sufficient levels of food products at line stations to ensure smooth service
  • Portion food products prior to cooking according to standard portion sizes and recipe specifications
  • Follow proper plate presentation and garnish set up for all dishes
  • Maintain a clean and sanitary workstation and corresponding equipment
  • Understand and follow proper rules of hygiene and food-safety measures to ensure all food prep areas and all food-storage areas meet restaurant cleaning standards
  • Memorize and utilize our serving portion sizes and all basic meal prep procedures
  • Assist in food prep for other shifts during off-peak periods, as needed
  • Monitor product freshness. Handle, store, and rotate all products properly and based on a schedule created by the restaurant
  • Open and close the kitchen properly, assists others, and follows checklists for kitchen stations
  • Assume 100% responsibility for quality of products served
  • Know and comply consistently with portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures
  • Participate in proactive communication to help avoid and solve operational, HR, and financial issues
  • Are punctual and able to observe regular and consistent attendance
  • Contribute to a positive team environment
  • Be flexible during shift to ensure a smooth and efficient operation of the restaurant as directed

WHAT YOU NEED TO BE A LINE COOK:
  • One year plus of cooking experience, preferably at least six months experience in a similar capacity in a high-volume kitchen
  • Comfortable working with a team in a fast-paced, loud kitchen environment
  • High level of professionalism
  • Passion for hospitality and food
  • Able to speak, read, write, and understand the primary language(s) used in the workplace
  • Able to read and follow a recipe to standards
  • Ability to work on your feet for eight hours or more a day in a confined area with fluctuating temperatures
  • Capable of lifting up to 50 pounds, as needed
  • Continuous bending, stooping, reaching, twisting, and use of hands and arms
  • Will be exposed to allergens such as nuts, seeds, soy, shellfish, and dairy
