Schedule: 12 PM start time (Sunday - Friday - Must be open to working 5 day schedule)

***Must be able to work weekends*** 

Compensation: $21.50 an hour

The Production team member assists the Production department in complete processing and manufacturing of pizza dough. Team Members are required to rotate to various positions [production room, dough cooler, and tray washer] throughout the shift. Work safely at all times.

RESPONSIBILITIES AND DUTIES

Production room and Dough processing

  • Determine the correct batch recipe to gather, measure and mix ingredients
  • Ensure dough is delivered into a rounder
  • Record batch data and maintain proofing library
  • Achieve and maintain dough certification
  • Perform metal detector checkups, and dough temperature monitoring document accordingly
  • Change dough sizes on dough divider, metal detector, JLS (dough bot) and ink jet, as needed
  • Spot check dough ball weight for inconsistencies
  • Check sifter tailings timely and record findings
  • Report any irregularities to Supervisor and Manager

Dough cooler and Staging product for shipment

  • Remove trays from conveyor belt as trays enter cooler and cross-stack onto dolly, as needed
  • Check to ensure all trays of dough produced are properly labeled
  • Down stack trays as dough temperature reaches target level and document, as needed
  • Rotate down stacked trays in cooler
  • Transport used trays to washing area to be cleaned
  • Monitor dough temperature and metal detector checks
  • Troubleshoot automated equipment, when needed, such as stacker, dolly loader, and/or tray buffer

Tray wash area

  • Loads trays onto conveyor for cleaning
  • Monitor gauges and settings to ensure water pressure, water temperature, and detergent levels consistently meet company standards determined to thoroughly clean and sanitize trays, record findings
  • Conduct titration and/or chemical testing on tray washer equipment, as needed

Sanitation responsibilities including, Production equipment, and General cleaning tasks

  • Clean and sanitize Vemag dough divider, production mixers, production mixing bowls, dough rounder, and food contact conveyor belts
  • Maintain detailed cleaning/sanitation logs required for Food Safety Audit documentation
  • Properly store all sanitation tools and equipment
  • Clean flour silo infeed, as needed
  • Ensure production’s and dough cooler’s floors are swept and dry
  • Ensure proper floor drainage in production room (clean floor drains)
  • Clean/Sanitize production room walls
  • Clean overhead evaporator units by using spraying water to rinse out evaporator catch pans
  • Ensure tray washer area is clean and sanitize as required by SOP guidelines
  • Ensure spiral floor and platforms are cleared of dough
  • Empty all dough waste containers
  • Ensure trash and recycling in production rooms is disposed of daily and receptacles are cleaned and sanitized
  • Support the production team by keeping production rooms and the site clean and sanitary
  • Scrape waste dough from trays
Qualifications

High school diploma or GED

  • One year of production or manufacturing experience
  • Ability to read/interpret production process materials, dough thermometers, gauges, and record data
  • Must be available to work during a shift which may be scheduled anytime during a 24-hour day, over any 7-day period, including holidays
  • Must be able to work in a cleaning/sanitation environment with water and other cleaning chemicals
  • Must successfully pass a background check every third year, on your anniversary date

PHYSICAL REQUIREMENTS

  • Ability to stand, climb, and walk on a continual basis throughout shift
  • Ability to lift from floor to above the head, to carry materials weighing up to 50 lbs. frequently, and 75 lbs. occasionally, throughout work shift
  • Must be able to utilize PIT equipment, i.e. scissor lift, for cleaning the walls and ceilings
  • Ability to work in refrigerated conditions and non-climate-controlled conditions ranging from 33 to 90 degrees plus and work in environment with exposure to loud machinery, when necessary
  • Able to work with yeast and flour products
  • Must be able to climb up and down stairs and ladders
  • Must be able to work wearing the Proper Protective Equipment
