Meat Master information

What is a meat master?

Meat Masters are skilled professionals who specialize in selecting, preparing, cutting, and presenting various types of meat. They possess in-depth knowledge about different cuts, quality grading, proper storage, and safe handling practices. Meat Masters may work in butcher shops, grocery stores, restaurants, or meat processing plants, and they often advise customers or chefs on the best meat choices for specific recipes. Their expertise ensures that meat is processed efficiently, safely, and to the highest quality standards.

What are the typical daily responsibilities of a meat master in a retail or butchery setting?

A Meat Master is responsible for overseeing the preparation, cutting, and presentation of meat products, ensuring both quality and food safety standards are met. Daily tasks often include breaking down carcasses, portioning cuts to customer specifications, maintaining equipment, and managing inventory levels. Additionally, Meat Masters may mentor junior staff, interact with customers to provide expert advice, and help develop new product offerings. Collaboration with suppliers and other departments, such as deli or prepared foods, is also common.

What are the key skills and qualifications needed to thrive as a meat master, and why are they important?

To thrive as a Meat Master, you need in-depth knowledge of meat cuts, food safety standards, and butchery techniques, often gained through vocational training or apprenticeships. Familiarity with specialized knives, meat grinders, saws, and adherence to HACCP protocols are typically required. Attention to detail, customer service skills, and the ability to work efficiently in a team set top performers apart in this role. These competencies ensure high-quality products, safe food handling, and customer satisfaction in meat processing and retail environments.

Job description

What You'll Do
Own the pit and meat operation: run our smokers with skill and consistency, cut and portion to spec, and monitor the quality of every pound of smoked meat that leaves your station. You'll manage inventory and food waste in the pit and meat area, follow process and procedure to the letter, and hold the line on safety and sanitation, because the whole brand rides on what comes off your smoker.
Who You Are
Your experience as a pitmaster, meat cutter, line cook, expediter, or prep cook is wanted here. You're disciplined, consistent, and genuinely proud of the craft. Low and slow isn't just how we cook. It's how you build a reputation.
What We Give You
  • Competitive pay and flexible schedules
  • Discounted meals (you'll be eating well)
  • Medical, dental, vision, 401(k), employer-paid life insurance, and vacation for eligible team members
  • Life Assistance Program and Bar-B-Q Family Fund, because we take care of our own
  • Real advancement, from the pit to kitchen manager and beyond

Our Values: Be Honest. Be Respectful. Be Committed. Be Disciplined. Be Supportive.
The Physical Stuff:
This role is hands-on and high-energy. You'll be on your feet up to 8+ hours a day in a live kitchen, lifting up to 50 lbs, with constant exposure to heat. Bending, reaching, climbing, and equipment operation are all part of the craft. Reasonable accommodations are available upon request.
