OVERVIEW: We are seeking a talented and creative Assistant Garde Manger Chef to join our culinary team at Boca West Country Club. The ideal candidate will be responsible for the preparation, presentation, and quality of cold food items, including salads, charcuterie, and cold appetizers. This role is crucial to ensuring that our members and guests receive exceptional dining experiences.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
• Prepare and present a wide variety of high-quality cold dishes, including salads, hors d'oeuvres, pâtés, terrines, and other plated items.
• Collaborate with the Executive Chef and kitchen staff to create seasonal menus and special event offerings.
• Ensure that all food is prepared in accordance with established recipes, guidelines, and presentation standards.
• Maintain cleanliness and organization of the garde manger station, including proper storage of food items in accordance with health and safety regulations.
• Monitor inventory levels of cold food items and assist in ordering supplies as needed.
• Work collaboratively with kitchen staff during service to ensure timely and efficient service.
• Maintain a focus on food safety and sanitation procedures in all areas of food preparation and handling.
• Train and mentor junior kitchen staff in garde manger techniques and practices.
• Assist with the design and setup of buffet displays and food stations for events and banquets.
• Enforce proper food handling and sanitation procedures to comply with health department standards.
• Participate in ongoing training and skill development to enhance culinary techniques and knowledge.
