Brugada Kitchen & Bar – Nashville

Brugada Kitchen & Bar is seeking a hands-on Kitchen Manager to oversee daily back-of-house operations while actively working alongside the team. This role combines leadership, organization, and line execution. You will run shifts, assist during peak service, prep during slower periods, and ensure the kitchen operates efficiently and profitably.

This position is ideal for someone who takes pride in both operational oversight and being part of the action.

What You’ll Do

Oversee Daily Operations

  • Lead and manage all BOH shift operations
  • Run service and maintain ticket flow
  • Ensure strong communication between line, prep, and expo
  • Maintain consistency, organization, and accountability

Work Alongside the Team

  • Step into any station as needed (grill, sauté, fry, expo)
  • Support the line during high volume
  • Assist with prep and production during slower days
  • Maintain quality and speed standards at all times

Prep & Production Management

  • Create and execute daily prep lists
  • Monitor pars and adjust production levels
  • Enforce FIFO and proper storage procedures
  • Minimize waste and control overproduction

Inventory & Cost Control

  • Manage ordering and vendor relationships
  • Conduct weekly inventory counts
  • Enforce portion control and recipe consistency
  • Monitor and protect food cost

Team Leadership & Labor

  • Build efficient BOH schedules
  • Train and develop kitchen staff
  • Uphold cleanliness and health standards
  • Foster a culture of accountability and teamwork
