Oxford Casino Hotel, located in Oxford, Maine, is indeed part of Churchill Downs Incorporated and has seen significant growth since it opened in 2012. JOB SUMMARY

Responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Supervisors.

ESSENTIAL DUTIES AND RESPONSIBILITIES
  1. Cleans according to standards the following items and areas: Broilers, deep fryers, grills, ovens, range hoods, ware washing machines, and floors and walk-ins.
  2. Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
  3. Knows and practices Health and Safety standards as set forth by governmental agencies.
  4. Washes hands at each possible point of contamination.
  5. Cleans, deck brushes, and mop all kitchen floors.
  6. Follows 3-compartment sink procedures.
  7. Weekly de-liming of each dish machine.
  8. Uses all chemicals according to use, and knows where sheets are located.
  9. Report any malfunctions of the dishwashing machine, (including temperatures too low or too high) or any other type of equipment used.
  • Sets up, breaks down, and maintains all dishwashers.
  • Empties all trashes and cardboard boxes to the dumpsters.
  • Must have the ability to multi-task and communication skills for safety.
  • Gives good internal customer service to the team members.
  • Cleans and maintains all cooks lines.
  • Any other duties as prescribed by supervisors in order to maintain kitchen.  These may includes but are not limited to the following: cleaning the ice machines, cleaning hand sinks, fill paper towels and soap dispensers, use and clean floor signs, etc. 
PHYSICAL REQUIREMENTS & WORKING CONDITIONS

Exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects. At other times, the work requires some physical exertion, such as reaching, standing, walking, pushing, pulling, and lifting.
