Job Description
The Assistant Food & Beverage Manager is responsible for aiding the Food & Beverage Manager. S/he will assist with overseeing assigned Food & Beverage outlets to ensure optimum performance, exceptional guest service and maximum profitability of all functions. S/he will train and motivate staff to exceed goals.
Essential Functions
• Maintains a commitment to customer service and guest satisfaction
• Leads and supervises the outlets team
• Ensures physical atmosphere and cleanliness of the restaurant, including inspecting tabletops and side stations
• Enforces high standards of hygiene and sanitation within the outlets
• Tracks payroll and revenue daily
• Assists with establishing par levels for supplies and equipment
• Supervises the performance, attendance, attitudes, appearance and conduct of service team
• Manages timely completion of performance appraisals of service team
• Assists in monitoring and maintaining the outlets' systems and equipment to ensure their optimum performance
• Develops and implements controls for expense management
• Helps to implement strategies to continually improve revenues
• Assists with the development, training and inspiration of outlets staff for promotion
• Assists with the design and implementation of training programs
• Empowers team to exceed service standards
• Instills a calm, organized approach in all stressful situations
• Works with HR to recruit and hire staff
• Helps to monitor time punches in Timesaver, ensuring accurate payroll for all associates
• Completes all proper new hire and termination paperwork
• Assists with ordering all necessary office supplies and ensures proper stocking levels
• Maintains a safe and pleasant work environment
• Ensures cleanliness of outlets' storage rooms
• Promotes high associate morale
• Recommends discipline and/or termination when appropriate of team members
• Takes a proactive approach to coaching and counseling
• Conducts staff meetings as necessary
• Attends appropriate resort, division and department meetings
• Resolves guest issues promptly and with great care and effectiveness
• Maintains a strong knowledge of hospitality trends, especially food & beverage
• Provides general resort information for guests
• Utilizes labor management tools to schedule and control labor costs
• Offers warm and sincere welcome/farewell for all guests of company use of guest name & good eye contact with each guest
• Maintains an up to date working knowledge of all resort amenities as well as any special events
• Interacts with resort staff in a professional manner, assisting other departments with necessary information
• Up sells other resort services and amenities to guests
• Always maintains a professional demeanor and attitude
• Communicates all pertinent information to the outlets team
• Maintains constant awareness of safety issues, (i.e. broken glass, frayed electrical cords, leaks, broken locks and suspicious persons). Reports all safety incidents to on-duty supervisor.
• Ensures proper handling, cleaning and sanitation of equipment, china, glass and silver.
• Follows through on lost and found procedures. No articles shall be removed from occupied rooms. Absolute respect for guest property should always be exercised.
• Remains alert, courteous and helpful to the guests and colleagues at all time
• Performs other related duties as assigned
Other Duties
• All Associates are required to fully comply with hotel and departmental rules, regulations and policies for the safe, secure, effective and environmentally friendly operation of the hotel facilities. Examples include, but are not limited to lost and found procedures, emergency procedures, recycling efforts, etc.
• Attend and participate in all hotel and/or departmental meetings, training sessions and other information meetings.
• Regular attendance in conformance with hotels standards is essential to the successful performance of this position.
• Comply with hotel grooming standards for both uniformed and non-uniformed associates.
• Comply with hotel service and behavioral standards towards our guests, vendors and fellow colleagues, including, but not limited to ensuring proper phone etiquette, courteous and respectful behavior and maintaining a friendly and positive attitude.
• Perform all other duties as directed by management that are consistent with the policies and procedures of the hotel.
Working Conditions & Physical Requirements
Physical Effort:
Significant portions of day require prolonged standing and moving, lifting or transporting materials up to 25 lbs such as trays, equipment, boxes, etc. Ability to visually review documents and computer screen throughout day.
Physical Environment:
Ability to walk or stand for extended periods of time during course of shift.
Manual Skills
Significant portions of daily assignments involve application of manual skills requiring motor coordination in combination with finger dexterity, e.g., typing, handwriting, or machine operations.
Work Schedule:
Due to the cyclical nature of the hospitality industry, Associates may be required to work varying schedules to reflect the business needs of the hotel. Flexible schedule including evenings, weekends, and holidays based on business needs.
Safety:
Responsible for operating within hotel safety guidelines, including the safe and responsible operation of hotel equipment. Reports and addresses safety concerns as they arise. Ensures safe handling of chemicals in accordance with hotel and department standards and utilizes proper personal protective equipment (PPE) when appropriate.
Qualifications
Education:
High school diploma or equivalent vocational training certificate required. Two or Four year degree preferred.
Experience:
At least three years supervisory Food and Beverage experience. Prior experience within a four star hotel brand preferred.
Computer Skill & Other Technical Skills:
Ability to learn and utilize computer software and hardware required. Ability to easily maneuver on computer keyboard required.
Ability to learn, utilize and communicate effectively via company issued communication devices (e.g. Nextel phones, etc).
Communication:
Advanced ability to comprehend and speak English to understand and respond to information and address advanced guest requests required both verbally and in writing. Knowledge of additional language(s) preferred.
