This role will be located at one of Discovery Land Company's locations: Atlantic Fields, set outside of Hobe Sound, FL.
Atlantic Fields is seeking a Head Baker to join the Food and Beverage Culinary Department.
The Head Baker oversees all bakery operations, including the mixing, proofing, baking, and presentation of artisan breads and specialty baked goods. This position combines culinary creativity with operational leadership, ensuring exceptional product quality, consistency, and efficiency across all bakery production.
In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

  • Direct and oversee daily bakery operations, including mixing, proofing, baking, finishing, and presentation of all baked goods.
  • Develop and manage production schedules to meet daily service and special event demands.
  • Delegate tasks effectively and ensure smooth workflow throughout bakery operations.
  • Monitor production levels to ensure product availability while minimizing waste.
  • Maintain consistency in quality, appearance, taste, and presentation standards.
  • Create, test, and refine recipes for artisan breads and seasonal specialty items.
  • Collaborate with culinary leadership to develop innovative menu offerings that align with member preferences and industry trends.
  • Standardize recipes and production methods to ensure consistency and cost control.
  • Uphold the highest standards for product quality, freshness, and presentation.
  • Troubleshoot production issues and implement solutions to maintain consistency.
  • Conduct regular product evaluations and staff tastings.
  • Recruit, train, mentor, schedule, and supervise bakery team members.
  • Foster a positive, collaborative, and professional work environment.
  • Lead by example while promoting accountability, teamwork, and continuous improvement.
  • Ensure compliance with all company policies, health regulations, and food safety standards.
  • Maintain clean, organized, and sanitary bakery work areas.
  • Oversee proper food handling, storage, labeling, and rotation procedures.
  • Ensure bakery equipment is operated safely and maintained appropriately.
  • Any other duties as assigned.

Qualifications

  • High school diploma or equivalent.
  • Degree or certification in Baking & Pastry Arts, Culinary Arts, or related field preferred.
  • At least ten (10) years of experience as a Baker, preferably in a fast paced, high end establishment, such as a luxury hotel, country club, etc.
  • Extraordinary attention to detail, quality and service.

Additional Requirements

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
  • Flexibility and ability to pivot to new projects and a desire to work in a fast-paced environment.
