Acclaimed chef Nancy Silverton is known for Los Angeles eateries such as Michelin-starred Osteria Mozza, Pizzeria Mozza andchiSPACCA. Signature dishes include Nancy's Caesar, Ricotta & Egg Raviolo, Grilled Hamachi Spiedino and Alla Benno pizza featuring pineapple in a nod to Lanai's heritage. Salads will feature freshlettucesfrom nearby Sensei Farms while pasta is made with local eggs, producing a uniquely rich fresh pasta dough. Breakfast specials include Smoked SalmonCrostone, SourdoughWafflesand Eggs in Purgatory.

WHAT YOU'LLDO

The CookII prepares menu items to guest specifications while supporting daily kitchen operations in a fastpaced environment.Responsibilities include, but are not limited to:

• Prepare food items to guest specifications whilemaintainingconsistent quality and adhering to recipe cards, portioning, and presentation standards

• Complete miseenplace and set up assigned workstation for service periods as scheduled

• Independently manage assigned kitchen station and support Cook I as needed, assuming Cook I responsibilities during absences

• Prepare items in advance asrequired, ensuring production aligns with forecasted needs to prevent overproduction

• Operate,maintain, andproperly cleankitchen equipment, including but not limited to fryers, broilers, stoves, steamers, ovens, grills, mixers, slicers, food processors, tilt kettles, steam tables, and waffle irons

• Date, label, rotate, and store food products according to food safety policies,maintainingproper temperatures at all times

• Monitor par levels,determineprep and freezer pulls, and ensure proper line setup for each shift

• Identifyand communicate outofstock items or potential shortages to leadership

• Return unused food items todesignatedstorage areas, ensuring proper covering, labeling, and dating

• Assistin controlling food costs by minimizing waste,monitoringproduct usage, and following established wastereduction procedures

• Support inventory accuracy andparticipatein corrective action planning related to food cost orutilizationissues

WHAT TOBRING

• Successful candidate mustpossesslegal work authorization in United States

• The hospitality business functions seven (7) days a week, twenty-four (24) hours adayand scheduled days and times may vary based on need. Holidays and weekends availability isrequired.

• Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card

• HawaiiFood Handler's Card andServSafeisrequiredfor this role

• Ability to stand for extended periods,lift upto70lbs, and push/pull as needed during shifts

• Ability tooperate,maintainandproperly cleanall equipment and utensils. Proficient knife skills and ability to multi-task.
