Assistant General Manager – Mellow Mushroom (Jacksonville, FL)

$56,000–$63,000/year + Quarterly Bonus Program

Since 1974, Mellow Mushroom has been slinging stone-baked pies with a heavy dose of good vibes. We're locally owned and operated with five Jacksonville shops — Avondale, Southside, Beach, Fleming Island, and River City — and we're looking for an Assistant General Manager who doesn't just support the business but drives it forward.

At Mellow, leadership isn't about titles — it's about ownership, awareness, and execution. You're the bridge between vision and execution: you turn standards into daily habits, expectations into results, and team members into leaders.

  • Own sales, labor, food cost, and profitability; manage schedules and staffing to match the business
  • Handle cash controls, inventory, and reporting accurately; keep the restaurant clean, organized, and complaints.
  • Jump into any role when the shift calls for it — lead by example

  • You're 21+ with 1+ year of restaurant leadership experience
  • Knowledge and understanding of restaurant operations and financials is a bonus
  • You know beer, wine, and liquor service — or you're ready to learn (we're willing to train)
  • You communicate clearly, stay calm under pressure, and take ownership — no excuses, no deflection
  • You don't wait, you anticipate. You don't manage problems, you prevent them. You don't maintain, you elevate.
  • You can thrive in a fast-paced, high-volume environment, stand for extended periods, and lift up to 50 lbs.
  • You're available to work 50–55 hours per week, including nights and weekends

Our 70s-inspired trippy vibes coupled with the delicious flavors of hand-crafted stone-baked pizzas and unique local beers quickly made Mellow an Atlanta favorite, the perfect place to relax and unwind.
