JOB SUMMARY: The Head Noodle Bar Chef will play a key role in managing the back-of-house culinary team, ensuring efficient service flow and high standards of food preparation. This position involves contributing to new menu creations and collaborating on innovative dishes, while maintaining cleanliness and sanitation of work areas and equipment, and adhering to Health Department standards. Ideal candidates will have a passion for culinary excellence and leadership experience in a fast-paced kitchen environment.
JOB RESPONSIBILITIES:
  • Responsible for supporting the Director of Food and Beverage in all aspects of quality, cost control, and completing inventories.
  • Develop, refine, and execute the noodle bar’s menu, keeping it exciting, seasonal, and relevant to customer preferences and market trends in KY.
  • Enforce strict food safety standards, ensuring that all kitchen staff follow proper hygiene and sanitation protocols
  • Create and standardize recipes to ensure consistency in taste, presentation, and quality, particularly given the high-volume nature of noodle bars.
  • Oversee plating and presentation to ensure every dish meets high standards and aligns with the restaurant’s brand.
  • Safely use all kitchen equipment, cleaning, and sanitizing products in accordance with all SDS sheets and departmental standards.
  • Streamline kitchen operations to maintain a high standard of food quality and service efficiency, especially in a high-paced environment.
  • Ensure that food is consistently prepared, plated, and served according to the restaurant's standards.
  • Create efficient schedules that meet demand while controlling labor costs. Balance staffing needs for peak and off-peak hours.
  • Hire, train, and mentor kitchen staff, ensuring they understand and adhere to the restaurant's culinary standards and values.
  • Maintain a solid knowledge of F amp;B products.
  • Demonstrates flexibility by working a variety of shifts to ensure presence and coverage as necessary based on business demands..
  • To provide BIG Service to internal and external guests and ensure their complete satisfaction, inclusive of greeting and interacting with guests in a friendly and enthusiastic manner, anticipating and meeting guest needs and preferences, remaining calm and professional when dealing with guests that are difficult or upset.
EDUCATION AND EXPERIENCE:
  • Culinary Minimum 3 years’ experience working in a high-volume culinary business.
  • High school diploma or its equivalent required.
  • Ability to work well under pressure in a fast-paced, ever-changing work environment
  • Advanced knowledge of health and sanitation code and policies
  • Highly organized with strong attention to detail
  • Must be 21 years of age or older.
  • Must pass all required pre-screening and background checks.
  • Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.
  • Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
  • Must be able to obtain and maintain a valid Kentucky gaming/racing license.
