Job description

Education & Qualifications: Minimum of a high school diploma or GED required. Formal culinary training and 1-3 years of culinary production experience in a high-volume kitchen environment preferred. Must be proficient in all kitchen stations. ServSafe Certification is required or must be obtained within three (3) months of hire. Must be able to stand for extended periods during 8-10-hour shifts and work effectively in a high-volume, fast-paced, guest-service-oriented environment while maintaining a positive attitude. During the park season, work schedules are based on business and operational needs and may require employees to work up to 55 hours and six (6) days per week, including evenings, weekends, and holidays. During the off-season, employees generally work a more consistent Monday-Friday schedule; however, some weekend work may be required based on operational needs.
Summary: The Kitchen Assistant I assists the Executive Chef with daily kitchen operations, food preparation, and maintaining high standards of food quality, cleanliness, safety, and guest service in a fast-paced environment. This position supports both park food service operations during the season and food production operations at Marianna Foods and/or other DelGrosso subsidiary organizations during the off-season. The Kitchen Assistant I is expected to work collaboratively with team members while helping ensure efficient kitchen operations and adherence to all food safety and sanitation standards. Starting Pay range: $15.16 - $17.57 an hour.
Essential Functions
  • Assist the Executive Chef with food preparation, training, and other assigned duties.
  • Prepare food according to established recipes, portion standards, and temperature requirements.
  • Ensure all products meet company standards for quality, flavor, and presentation.
  • Maintain clean, organized, and sanitized kitchen and work areas.
  • Follow and promote all food safety and sanitation procedures.
  • Monitor and document food temperatures as directed and required.
  • Assist in monitoring staff breaks and job assignments to ensure compliance with child labor laws.
  • Assist in ensuring job assignments are completed efficiently and in a timely manner.
  • Report disciplinary concerns and policy violations to the Executive Chef.
  • Help guide production staff in completing daily assignments while maintaining teamwork, operational efficiency, and guest satisfaction.

  • Assist with food production operations at Marianna Foods and/or other DelGrosso subsidiary organizations as assigned.
  • Operate or assist in the operation of equipment including floor slicers, hand slicers, condiment packaging machines, dressing packaging machines, choppers/shredders, dressing mixers, and dishwashing machines.
  • Prepare raw materials including meats, cheeses, and vegetables.
  • Portion meats and other products using digital scales according to production schedules.
  • Assist with the preparation, production, and packaging of various food products and condiments.
  • Assist with production line operations.
  • Clean and sanitize equipment, utensils, sinks, tables, walls, floors, and drains in accordance with sanitation procedures.
  • Complete and maintain required production and sanitation documentation.
