Job description

Job Summary
Maintain recipes for the daily run, ability to maintain run time for each vat, and maintain daily logs
Essential Functions
  • Ensure all ingredients Schedule calls for goes into each vat- This includes any trial cultures, rennet or color.
  • Know where to find all steps on production log on HMI.
  • Be familiar with different recipes and contact TL if actual events do not match recipe.
  • Run required samples and contact TL if any results are out of range.
  • Record data into HCV vat report, HCV log sheet, Sanitize log and CIP log.
  • Ensure HCV's are properly short washed in between fills and that the sanitizer ppm is within range contact TL if not.
  • Ensure start up and in process micro samples are taken.
  • Ensure HCV's are properly long washed after the last fill per HCV each day.
  • Ensure each vat is inspected after CIP for any foreign material, water Etc. Report to TL.
  • Ensure curd line CIP is done properly and quickly each day in order to ensure good turn around.
  • Ensure that production schedule is adhered too.
  • Ensure environmental cleaning logs are completed and documented.
  • Ensure that culture freezer temp log and FIFO book are completed.
  • Utilizes GPS processes, driving zero losses and upholds the culture of Southwest Cheese non-negotiables.
  • Each employee shall comply with occupational safety and health standards and all rules, regulations, and orders issued pursuant to the Occupational Safety and Health Act which are applicable to his/her own actions and conduct.
  • Complies with all applicable food safety regulations and mandates. (Food Safety Modernization Act- FSMA, Safe Quality Foods, Food and Drug Admin, Pasteurized Milk Ordinance)
