At PJ Lobster House, our Fish Market Closing Associate is responsible for properly closing and securing our seafood market at the end of each day. This position plays a critical role in protecting product quality, maintaining the highest sanitation standards, and preparing the market for another successful day of business.
Every product must be properly stored, every surface thoroughly sanitized, and every cooler organized before the lights go out. Your attention to detail protects the quality of our seafood, preserves inventory, and ensures the next day's Opening Team begins with a clean, organized, and fully prepared seafood market.
Our Fish Market Closing Team carefully packs away fresh seafood, sanitizes display cases, organizes coolers, ices seafood properly, cleans work areas, maintains restrooms, and secures the restaurant before leaving for the evening.

Responsibilities- Begin nightly closing responsibilities at approximately 9:30 PM.
- Remove all seafood from the display case and properly store products according to company procedures.
- Ice down fresh seafood in walk-in coolers to maintain freshness and product quality.
- Clean, sanitize, and disinfect all seafood display cases and display trays.
- Wrap, label, date, and properly store deli case products.
- Rotate seafood inventory using FIFO (First In, First Out) procedures.
- Clean and sanitize all countertops, cutting boards, sinks, and food preparation surfaces.
- Scrub, sanitize, and mop fish market floors, walk-in coolers, and lobster tank room.
- Clean all glass display cases, windows, and customer viewing areas.
- Clean, sanitize, and restock guest and employee restrooms.
- Organize coolers, freezers, and storage areas for the next day's Opening Team.
- Remove trash, recycling, and cardboard as needed.
- Follow all food safety, sanitation, labeling, and storage procedures.
- Lock the restaurant, secure all entrances, and properly set the security alarm before leaving.
- Complete all closing checklists and side work as assigned.
