Job description

Position Summary

At Westin, we believe that a refreshed space supports a renewed sense of well-being. The Steward plays an essential role in creating a clean, safe, and seamless back-of-house environment that enables our culinary teams to perform at their best. This position ensures that kitchens, dish areas, storage spaces, and equipment are meticulously maintained—supporting our commitment to delivering thoughtful, elevated experiences for every guest.

Essential Duties & Responsibilities

Back-of-House Care & Cleanliness

  • Maintain pristine kitchen environments by thoroughly cleaning and sanitizing floors, walls, drains, and all work surfaces.
  • Deep-clean and care for culinary equipment, including ovens, fryers, grills, steamers, and kettles, ensuring optimal performance and hygiene.
  • Preserve organization and cleanliness in coolers, freezers, dry storage, and preparation areas.
  • Uphold a polished and orderly appearance in loading docks, waste areas, recycling centers, and compost spaces.
  • Perform scheduled pressure washing to maintain safe and refreshed work environments.

Dish Room Support

  • Collaborate with stewards and culinary teams to ensure the smooth flow of clean wares.
  • Maintain dish machines by cleaning, monitoring, and supporting proper operation.
  • Deliver clean wares efficiently to outlets and banquet areas, supporting seamless service.

Equipment & Chemical Stewardship

  • Utilize cleaning products and personal protective equipment responsibly, following all safety and MSDS guidelines.
  • Operate cleaning equipment such as floor scrubbers, buffers, pressure washers, and wet vacuums with care and precision.
  • Promptly communicate any equipment concerns to leadership to ensure a safe and efficient environment.

Resort-Wide Support

  • Partner with Banquets, Restaurants, and Pool Kitchens to maintain clean, organized back-of-house spaces across the resort.
  • Support sustainability efforts by managing recycling, composting, and waste processes, including cardboard breakdown and compactor upkeep.
  • Contribute to the success of events by maintaining cleanliness before, during, and after service.

Standards & Compliance

  • Uphold Westin and Dolphin Hotel Management, LLC standards for cleanliness, safety, and food handling, including HACCP protocols.
  • Present a professional appearance consistent with Westin grooming standards.
  • Complete daily responsibilities with care and accuracy, ensuring clear communication with leadership.
Qualifications
  • Prior experience in stewarding, kitchen utility, or housekeeping within a hospitality or fast-paced environment is preferred.
  • Strong attention to detail with a commitment to maintaining elevated cleanliness standards.
  • Ability to work collaboratively as part of a team while also managing independent responsibilities with care and efficiency.
  • Basic understanding of safe cleaning practices, chemical usage, and equipment operation preferred; training will be provided.
  • Flexibility to work varied shifts, including evenings, weekends, and holidays, in support of resort operations.
  • A positive, service-oriented mindset with a dedication to supporting the overall guest and team member experience.

Physical Requirements

  • Ability to stand and walk for extended periods in a dynamic, fast-paced environment.
  • Must be able to lift, carry, push, and pull items weighing up to 50 pounds safely and consistently.
  • Frequent bending, stooping, kneeling, and reaching to clean and maintain work areas and equipment.
  • Ability to operate cleaning machinery and equipment safely and effectively.
  • Comfortable working in varied temperatures, including hot kitchen environments and cold storage areas.
  • Exposure to cleaning chemicals and wet surfaces, requiring adherence to all safety protocols and proper use of personal protective equipment.
