As an immersive Sushi Cook, you'll play a vital role in the Kaia experience by delivering an exceptional dining experience. You will prepare and cook a variety of Asian-inspired dishes in front of guests while interacting with them, sharing stories or information about each dish as you serve it. You'll contribute to all aspects of sushi production and food preparation in a lively and imaginative environment. We're looking for someone with prior culinary experience in a sushi restaurant who thrives in providing top-tier service and isn't afraid of delivering immersive extraordinary experiences. Your main responsibilities will include delighting guests and preparing sushi items in a guest-facing role while ensuring compliance with sanitation and food standards set by SNHD.
JOB RESPONSIBILITIES AND DUTIES:
  • Engage with guests in an upbeat, approachable, and professional manner while preparing sushi on an open line.
  • Provide a welcoming and energetic presence that enhances the overall dining atmosphere.
  • Guests will be welcomed with a verbal greeting as they enter and exit the restaurant.
  • Answer guest questions about menu item, offer information about ingredients and preparation techniques with enthusiasm and accuracy.
  • Proactively interact with guests to create memorable experiences, creating a fun and lively environment.
  • Contribute to maintaining an energetic, guest-centric dining room atmosphere in collaboration with service staff.
  • Support a culture of hospitality by ensuring interactions reflect friendliness, attentiveness, and care for the guest experience.
  • Tell a story or provide information about each dish as it's being served to the guest.
  • Prepare all sushi menu items according to approved recipes in a timely manner.
  • Demonstrate excellent time-management skills in food preparation and guest service.
  • Work collaboratively with the team to ensure efficient and accurate service, adhering to the restaurant's standards for food preparation, temperatures, ticket times, and flavor profiles.
  • Dispose of any leftover items properly.
  • Suggest menu items or combinations to enhance the dining experience for guests.
  • Inventory and properly store all fish, seafood, perishable, and non-perishable ingredients.
  • Properly handle and cook proteins including but not limited to all seafood items while ensuring correct temperatures.
  • Ensure the correct use of all kitchen equipment.
  • Maintain a clean station, adhere to hygiene and sanitation standards at all times.
  • Maintain compliance with food handling and sanitation standards.
  • Monitor the quality of raw food products to meet standards.
  • Arrive punctually for shifts and follow Standard Operating Procedures (SOPs) set by AREA15.
  • Ensure equipment is maintained as outlined in safety and preventive maintenance programs.
  • Maintain the correct temperature of all food products during handling.

Position Requirements
QUALIFICATIONS & SKILLS:
  • Applicants must be 21 years of age or older.
  • Proof of eligibility to work in the United States.
  • Comfortable working in a creative, entrepreneurial start-up environment, introducing new concepts and innovations.
  • Strong knife skills, including precision cutting for nigiri and sashimi.
  • Proficiency in portioning rice, protein, and vegetables to ensure consistency
  • Ability to execute proper maki (rolls) preparation with efficiency and presentation.
  • Understanding of proper fish handling.
  • Expertise in plating and presentation for sushi dishes
  • Minimum 1 year of sushi experience in a high-volume sushi restaurant or a related setting.
  • Possession of a valid SNHD Health Card.
  • Proficient knowledge of SNHD guidelines and requirements.
  • Ability to lift up to 50 lbs. unassisted.
  • Able to stand, walk, bend, and lift for extended periods.
  • Ability to work with a team, being a team player.
  • Ability to understand, speak, read, and write the English language.
  • Availability for varied shifts, including evenings, weekends, and holidays.
  • Ability to work in low lighting and sensory-sensitive environments.
  • Ability to work in an environment subject to varying levels of noise, crowds, flashing lights, and smoke.
  • Must have the ability to withstand high temperatures, heat, and sun exposure.
